The Skylark Restaurant Manager

A rare opportunity to shape the clubhouse experience at Ireland’s newest 5-star luxury hotel and golf destination.

About The Hawthorn by Galway Bay

Poised on the edge of Galway Bay, where land meets sea, The Hawthorn by Galway Bay is set to become Ireland’s newest 5-star hotel — a destination shaped by nature and refined by exceptional hospitality.

Nestled along the Wild Atlantic Way and surrounded by native hawthorn trees, the resort sits alongside an 18-hole championship golf course and offers an exceptional combination of luxury accommodation, wellness, dining and leisure experiences.

The Hawthorn by Galway Bay will feature 114 beautifully appointed bedrooms,including 47 suites, a luxurious spa and wellness offering, destination dining, extensive event facilities and panoramic views across the Atlantic coast.

As part of this exciting opening team, you will have the opportunity to help establish the standards, culture and guest experience of a landmark new luxury destination in Ireland.

The Position

Position: The Skylark Restaurant Manager.
Department: Food and Beverage.
Reports to: Food and Beverage Manager and Hotel General Manager.

About the Role

The Skylark Restaurant Manager will take overall responsibility for the day-to-day operation, presentation, service delivery and guest experience of The Skylark Restaurant , Aviary and The Warren Coffee Dock ensuring that every aspect reflects the standards expected from Leading Hotel of The World.

This is a highly visible operational leadership role, responsible for The Skylark Restaurant, Aviary, Afternoon Tea, and The Warren Coffee Dock. The role will also work closely with all other departments within the hotel to ensure a seamless experience for both hotel residents and non-resident diners.

The successful candidate will be an organised, commercially aware, and hands-on hospitality professional who leads by example. They will possess a keen eye for detail, excellent communication and leadership skills, and a natural ability to create a warm, professional, and consistently welcoming environment for both guests and colleagues.

The role will involve overseeing breakfast, lunch, afternoon tea, and dinner service, ensuring exceptional standards of service and presentation are maintained throughout each service period.

Key Responsibilities

Take day-to-day operational responsibility for The Skylark Restaurant , Aviary and The Warren Coffee Dock ensuring all areas are prepared, organised and operating efficiently.
Maintain exceptional standards of presentation, cleanliness, ambience, safety and functionality throughout the
Ensure all service areas, including back of house area, are correctly set up and maintained consistently throughout all service periods.
Provide visible leadership within The Skylark Restaurant , Aviary and The Warren Coffee Dock to ensure all guests, receive a warm, professional and personalised experience.
Monitor guest flow and operational activity, proactively identifying and resolving issues before they impact the guest experience.
Maintain a strong presence during key service periods and adopt a hands-on approach when operationally required.
Take ownership of service recovery within The Skylark Restaurant , Aviary and The Warren Coffee Dock, ensuring guest concerns are addressed promptly and professionally.
Build strong relationships with members and regular guests, developing an understanding of their preferences and expectations.
Ensure The Skylark Restaurant , Aviary and The Warren Coffee Dock consistently reflects the service philosophy and standards of a 5-star luxury resort. Have a strong knowledge and understanding of either LQA standards or Forbes standards.
Maintain strong stock, ordering, labour, and cost controls.
Ensure all operations comply with company standards, health & safety requirements, and relevant regulations.
Proactively manage guest feedback and service recovery.
Support the training, onboarding and development of all colleagues.
Identify opportunities to continuously improve the guest experience and operational performance.
Be hands-on and operationally present when required, particularly during busy service periods and major events.

We are looking for an experienced hospitality leader who combines professionalism, warmth, commercial awareness, and an exceptional eye for detail.

You will ideally have:

Previous management or supervisory experience within a 5-star hotel, luxury resort or premium hospitality environment.
Strong Food & Beverage operational experience.
Proven experience leading and developing hospitality teams.
Have a strong knowledge and understanding of either LQA standards or Forbes standards.
Experience managing rotas, labour, stock and operational costs.
Excellent communication and organisational skills.
A proactive, hands-on leadership style.
The confidence and presence to build strong relationships with guests, members and colleagues.
Flexibility to work evenings, weekends, holidays, and major events as required.
Eligibility to work in Ireland without the assistance of employer sponsorship.
