Senior Chef Manager needed to join team at Firecastle
Firecastle is both a service and production kitchen including bakery and deli and is expanding fast, suited to chef with strong leadership skills with all round culinary experience .
Knowledge of menu planning and product development a plus, passion for high quality food essential
Ability to work across multiple sections and have some experience in supervising a team
The successful candidate will support the Head Chef in the day-to-day running of a busy kitchen operation, helping to maintain exceptional food standards across multiple food offerings including breakfast service, deli lunch service, weekend pizza service, ready-made meals, fresh breads, pastries, and cakes.
Firecastle operates as a 7-day operation, so flexibility is essential. Typical working hours are generally:
- 7:00am – 3:00pm
- 9:00am – 6:00pm on production days
Key Responsibilities
- Support the Head Chef with the daily management of the kitchen
- Assist with staff supervision, kitchen organisation, and service coordination
- Manage and maintain HACCP procedures and food safety standards
- Assist with staff rostering and scheduling
- Handle stock control and supplier ordering
- Contribute to menu planning and ongoing product development
- Bring creativity and innovation to seasonal dishes and retail food offerings
- Ensure consistency, quality, and presentation across all products
- Work collaboratively across all sections of the kitchen including bakery, pastry, hot food, and pizza
Candidate Requirements
- Proven experience working in a busy professional kitchen
- Strong knowledge of HACCP and food safety procedures
- Experience with ordering, stock management, and kitchen administration
- Ability to work across multiple kitchen sections and service styles
- Experience in fresh food production, baking, pastry, and savoury preparation
- Creative mindset with an interest in product development and artisan food
- Strong organisational and communication skills
- Ability to work well under pressure in a fast-paced environment
- A positive attitude and strong team ethic
- Flexibility to work across a 7-day roster

Pay: €38,000.00-€42,000.00 per year
