The Role
As Executive Head Chef, you will be responsible for the strategic and operational leadership of all kitchen functions throughout the hotel. You will oversee menu development, food production, team performance, cost management, compliance, and guest satisfaction, ensuring all culinary offerings reflect the Osprey Hotel's reputation for excellence.
You will work closely with the General Manager and wider leadership team to deliver innovative food concepts, achieve commercial objectives, and continuously elevate the guest dining Experience.

About The Role
Key Responsibilities
Culinary Leadership & Menu Development

Design and develop innovative menus across all hotel restaurant, bars, weddings, conferences, and banqueting events.

Ensure exceptional food quality, consistency, presentation, and portion control across all services.

Drive creativity while maintaining strong commercial awareness and operational efficiency.

Lead recipe development, menu costing, allergen management, and food specification standards.

Keep abreast of culinary trends and introduce fresh ideas that enhance the hotel's food offering.
Kitchen Operations

Oversee the day-to-day management of all kitchen areas, ensuring smooth and efficient service delivery.

Develop and implement production schedules, preparation plans, and service procedures.

Ensure kitchen equipment is maintained, operated safely, and serviced appropriately.

Manage stock levels, ordering processes, deliveries, and supplier relationships.

Optimise workflow, productivity, and operational standards throughout the kitchen brigade.
Team Leadership & Development

Lead, motivate, and inspire a high-performing kitchen team.

Recruit, train, mentor, and develop chefs at all levels.

Foster a positive, professional, and collaborative working environment.

Conduct regular training sessions covering culinary skills, food safety, compliance, and operational standards.

Support succession planning and identify future talent within the team.

Lead by example, demonstrating professionalism, integrity, and a strong work ethic.
Compliance & Food Safety

Ensure full compliance with HACCP, food safety legislation, health and safety requirements, and company policies.

Maintain impeccable hygiene and cleanliness standards throughout all kitchen operations.

Conduct regular audits, temperature checks, and compliance documentation reviews.

Drive a culture of accountability and best practice across the culinary team.
Commercial & Financial Performance

Manage and control food cost, labour cost, waste reduction, and stock management to achieve budgeted targets.

Monitor gross profit performance and implement strategies to enhance profitability.

Support menu engineering, pricing strategies, and supplier negotiations.

Identify opportunities to improve efficiency without compromising quality or guest satisfaction.

Contribute to the overall commercial success of the hotel through strong financial management and innovation.
Collaboration & Guest Experience

Work closely with the General Manager, Hotel Manager, Event Manager, and wider leadership team.

Support the delivery of exceptional guest experiences across all food and beverage operations.

Respond proactively to guest feedback and continuously seek opportunities for improvement.

Champion the Osprey Hotel brand standards and values in all culinary operations.
Ideal Candidate requirements

Proven experience as an Executive Head Chef or Head Chef in a high‑volume, high‑quality hotel environment

Excellent leadership skills with the ability to inspire, train, and develop a diverse team

Strong understanding of kitchen operations, cost control, and menu engineering

Comprehensive knowledge of HACCP, food safety standards, and compliance requirements

Ability to work under pressure while maintaining exceptional standards
