The Powerscourt Hotel, Resort & Spa is currently recruiting for a Head Breakfast Chef who is highly motivated, well organised and passionate in delivering memorable experiences to join our Culinary team .

This role offers a competitive rate of pay, ongoing training and complimentary transport to and from Bray Dart Station. Accommodation is also available.

About the role:

The Head Breakfast Chef is responsible for leading and delivering the breakfast operation at Powerscourt Hotel, ensuring an exceptional five-star guest experience through outstanding food quality, consistency and service. The role oversees the preparation, presentation and service of breakfast for hotel guests while maintaining the highest standards of food safety, cleanliness, cost control and team leadership. Powerscourt serves breakfast overlooking the Wicklow Mountains and is recognised for its luxury guest experience.

Key Responsibilities

Operational Excellence
Lead the daily breakfast service from preparation through to completion.
Ensure all buffet and à la carte breakfast items are consistently prepared to five-star standards.
Maintain exceptional food presentation, freshness and product quality.
Ensure all food is produced according to standard recipes and portion controls.
Organise mise en place to ensure efficient service.
Monitor guest feedback and continuously improve the breakfast offering.
Support VIP breakfasts and special dietary requests.
Leadership
Supervise, motivate and develop the breakfast kitchen team.
Conduct daily team briefings before service.
Train new employees in Marriott and hotel standards.
Monitor performance and provide coaching where required.
Assist with recruitment and onboarding when necessary.
Promote teamwork and a positive kitchen culture.
Food Safety & HACCP
Ensure full compliance with HACCP legislation.
Maintain excellent kitchen hygiene standards at all times.
Complete daily temperature records and food safety documentation.
Ensure allergens are managed correctly and communicated effectively.
Maintain safe food storage, labelling and stock rotation (FIFO).
Ensure Ecolab cleaning standards are consistently achieved.
Financial Responsibilities
Manage breakfast food cost through effective ordering and waste reduction.
Control stock levels and minimise wastage.
Complete stock counts as required.
Ensure accurate ordering based on forecast occupancy.
Maximise yield through efficient production planning.
Administration
Complete production sheets and ordering.
Assist with menu development and seasonal breakfast offerings.
Maintain equipment in good working order and report maintenance issues promptly.
Ensure all Marriott brand standards and hotel SOPs are followed.

The successful candidate will have training and experience in a high standard food prep and service environment.
