Full job description

We are seeking an experienced, passionate, hands-on, and commercially minded Head Chef to lead the kitchen for the reopening of a busy town centre pub and restaurant in Portlaoise.

This is a unique opportunity to help shape the future of a well established venue from the ground up. You will have the freedom to create an exciting food offering, build a motivated kitchen team, and play a key role in the successful relaunch and long-term growth of the business.

This role goes beyond simply managing a kitchen. You will have genuine input into menu development, supplier relationships, kitchen systems, food strategy, and the overall customer experience. We are looking for someone who takes pride in producing consistently excellent food while understanding the commercial side of running a successful kitchen.

About You

We are looking for a chef who:

Is passionate about creating high-quality, fresh food.
Enjoys leading, mentoring and developing a strong kitchen team.
Thrives in a fast-paced environment and leads by example.
Has excellent organisational and communication skills.
Is commercially aware, with a strong understanding of food costs, GP, stock control and labour management.
Takes pride in consistency, cleanliness and high kitchen standards.
Brings creativity and enthusiasm to menu development while delivering dishes that customers will return for.
Wants to be part of building something special from day one.

Responsibilities

Lead the day-to-day operation of the kitchen.
Design and develop seasonal menus.
Recruit, train and motivate the kitchen team.
Manage food purchasing, stock control and supplier relationships.
Maintain exceptional food quality and presentation.
Ensure all HACCP and food safety standards are met.
Work closely with the management team to drive sales, profitability and customer satisfaction.
