The Role
As our senior bar person, you won’t just be pouring drinks—you will be the face and energy behind our bar. You will manage daily bar operations, maintain impeccable standards, and curate a drink experience that complements our food offering.
Key Responsibilities:
Lead & Manage: Oversee the day-to-day running of the bar, ensuring slick operations, stock control, and flawless presentation.
Curate the Experience: Elevate our beverage program by managing and serving our extensive range of craft beers, fine wines, and signature cocktails.
Host with Personality: Bring an outgoing, engaging, and charismatic presence to the floor, building genuine rapport with locals and visitors alike.
Drive the Business: Work closely with management to launch new drink menus, optimize profitability, and establish Market Square as the go-to destination in the region.
Train & Inspire: Set the benchmark for standard operating procedures, ensuring consistency and compliance in hygiene, safety, and service.
What We Are Looking For
Proven Experience: Minimum of 2–3 years in a senior bar role, ideally within a high-volume, premium restaurant, cocktail bar, or gastropub environment.
Beverage Passion: Strong, demonstrable knowledge of mixology, international wines, and the Irish craft beer scene.
The "Host" Factor: An outgoing, high-energy personality. You are naturally engaging, love hospitality, and know how to create an unforgettable atmosphere.
Leadership Skills: Sharp organizational skills with the ability to manage stock, margins, and maintain a pristine workspace under pressure.
Flexibility: Availability to work evenings, weekends, and bank holidays.
