The Assistant Bar Manager will manage daily operations, lead the floor team, and drive revenue at our high-volume sports bar in the Coolock area. You will work directly with the Bar Manager to maintain a high-energy atmosphere, deliver exceptional customer service during peak match days, and ensure strict compliance with Irish licensing laws.
Key Responsibilities
- Lead floor operations during high-volume sports broadcasts, weekend shifts, and local events.
- Coordinate staff positioning across multi-screen viewing areas to ensure fast, efficient table and counter service.
- Resolve customer complaints quickly and professionally to maintain a safe, welcoming environment for all patrons.
- Maintain atmosphere quality by managing audio-visual equipment, lighting levels, and crowd control.
Team Leadership & Training
- Supervise and motivate a fast-paced team of bartenders, lounge staff, etc..
- Train part-time staff on perfect pour standards, upselling premium products, and speed of service.
- Enforce uniform standards, punctuality, and professional conduct across all shifts.
- Assist with scheduling to ensure optimal staffing levels during major sporting tournaments (e.g., Premier League, Six Nations, GAA championships).
Stock, Cellar & Financial Control
- Manage cellar operations, including line cleaning, gas system checks, and keg rotation.
- Conduct weekly stocktakes to monitor variance, minimize wastage, and track high-volume spirit inventory.
- Handle cash reconciliation, including till floats, mid-shift drops, end-of-night counting, and safe deposits.
- Liaise with suppliers to accept deliveries, verify invoices, and report any shortfalls or damaged goods.
Compliance & Safety
- Enforce Responsible Service of Alcohol (RSA) guidelines and strictly verify age documentation to prevent underage drinking.
- Monitor crowd behaviour closely, working alongside the door security team to manage capacity limits.
- Maintain strict hygiene standards in line with HACCP regulations across the main bar, cold rooms, and glass washing stations.
- Act as the designated keyholder, managing opening procedures, late-night lockups, and building security alarms.
Required Qualifications & Skills
Experience
- Minimum 2 years of supervisory or team-lead experience in a high-volume bar or pub environment.
- Proven track record handling peak trading hours, ideally within a sports bar, nightclub, or busy festival venue.
Technical Skills
- Strong cellarmanship skills, including changing kegs, managing gas levels, and basic line maintenance.
- Proficiency with modern POS systems (e.g., Everyman, TouchBros), inventory management software, and digital staff scheduling tools.
- Comprehensive knowledge of Irish liquor licensing laws and official HACCP food safety standards.
Personal Attributes
- Excellent communication skills to effectively manage both sports-driven crowds and diverse staff teams.
- Strong problem-solving abilities to handle technical AV issues or fast-moving crowd dynamics under pressure.
- Flexibility to work unsocial hours, including late nights, bank holidays, and weekends.
