Chef de Partie – Tapas Specialist

Employer: Aces Lounge Castletroy Limited (also trading as ACES Limerick)

Location: ACES Limerick, Unit 7B, Castletroy Park Retail Park, Castletroy, Limerick, V94TKD3
Salary: €36,605 per annum
Hours: 39 hours per week

Job Responsibilities

Support the Head Chef and Sous Chef in the day-to-day running of the kitchen.
Take primary responsibility for the preparation and execution of tapas/small plates dishes (and desserts when needed), ensuring consistency, presentation, and flavor.
Assist with other kitchen stations as needed to maintain service flow.
Maintain high culinary standards in line with the restaurant’s brand and ethos.
Adhere to HACCP guidelines and ensure all food safety and hygiene protocols are followed.
Monitor mise en place, stock rotation, and assist with inventory management.
Collaborate on menu development and seasonal offerings.
Work efficiently in a fast-paced environment while maintaining cleanliness and organization.

Requirements

Minimum 2 years of experience as a Chef de Partie or equivalent in a professional kitchen.
Proven experience and passion for food and cooking, with an understanding of Mediterranean and international flavor profiles.
Ability to work as part of a team and take initiative in a busy kitchen.
Strong attention to detail and commitment to quality.
HACCP certification and working knowledge of food safety practices.
Availability to work evenings, weekends, and public holidays.
