We now have a fantastic new opportunity for a Head Banqueting Chef to join our team and contribute to the future success of Killashee Hotel.
Key Requirements:

Proven experience as a Banqueting Chef, Sous Chef, or Head Chef in a hotel, resort, or large catering environment.

Strong leadership and team management skills.

Excellent knowledge of large-scale food production and event catering.
-
Ability to work under pressure and manage multiple events simultaneously.

Strong organizational and communication skills.
-
Knowledge of food safety and HACCP procedures.
-
Experience using Kelsius system and procure wizard would be an advantage.

Flexibility to work evenings, weekends, and holidays as required.
Main Duties:

Plan, organise, and oversee all banqueting food production.
-
Design and develop banquet menus in collaboration with management and clients.

Lead and supervise the banqueting kitchen team.
-
Ensure all dishes are prepared and presented to the highest standards.

Coordinate closely with event managers and front-of-house teams to ensure smooth service delivery.

Monitor food quality, portion control, and consistency during events.
-
Manage stock ordering, inventory, and supplier relationships.
-
Control food costs and minimize waste while maintaining quality.
-
Ensure compliance with food hygiene, HACCP, and health & safety regulations.
-
Maintain cleanliness and organization of kitchen and storage areas.
-
Handle special dietary requirements and allergen management effectively.
