Oliver Dunne Restaurant Group is seeking a dynamic and experienced Executive Head Chef to lead the culinary vision of a multi-faceted venue in North County Dublin. This is a senior leadership role responsible for overseeing all kitchen operations across multiple offerings within the venue, which may include a la carte dining, private dining, and high-end service.
The ideal candidate is a creative and commercially astute chef with a passion for excellence (Italian & Spanish Cuisine), a strong leadership presence, and a proven track record in managing complex kitchen environments.
Leadership & Team Management

Lead, mentor, and inspire a large, multi-disciplinary kitchen brigade

Recruit, train, and develop team members to deliver consistently high standards

Foster a positive, professional, and performance-driven kitchen culture

Ensure clear communication across all departments within the venue
Culinary Direction

Develop and execute innovative, seasonal menus across all facets of the venue

Maintain consistency, quality, and presentation standards in line with the group's brand

Stay ahead of food trends while respecting the identity of the business

Oversee menu tastings, launches, and continuous improvement
Operations & Performance

Manage all kitchen operations, ensuring smooth service across multiple revenue streams

Monitor and control food costs, labour costs, and kitchen budgets

Drive profitability while maintaining exceptional quality standards

Implement and maintain efficient kitchen systems and processes
Compliance & Standards

Ensure full compliance with food safety, HACCP, and health & safety regulations

Maintain impeccable cleanliness and organisation across all kitchen areas

Uphold all company policies, procedures, and brand standards
Collaboration

Work closely with senior management, front-of-house teams, and group leadership

Contribute to business strategy, planning, and growth initiatives

Support marketing efforts, events, and brand development where required

Proven experience as an Executive Head Chef or Senior Head Chef in a high-volume, multi-outlet or multi-faceted venue

Strong leadership and team development skills

Excellent organisational and time management abilities

Commercially aware with strong financial acumen

Passion for high-quality food, innovation, and guest experience

Experience in menu development across diverse dining concepts

In-depth knowledge of food safety and compliance standards

Experience within a premium or award-winning hospitality group

Background in both restaurant dining
