We are seeking an experienced, organised and reliable Production Chef to join our growing catering operation based at the Killarney.
The successful candidate will be responsible for preparing high-quality meals for secondary school canteens and other catering contracts. This role focuses on batch cooking, food preparation, portion control, packaging and maintaining the highest standards of food safety and quality.

Key Responsibilities
- Prepare and cook meals according to established recipes and production schedules.
- Produce high-quality hot and cold food for school catering operations.
- Ensure consistency in taste, quality and presentation.
- Portion and package meals for delivery to school locations.
- Label products correctly and maintain allergen information.
- Follow HACCP, food safety and allergen management procedures at all times.
- Monitor and record food temperatures as required.
- Ensure correct cooling, storage and handling of prepared foods.
- Assist with menu development and seasonal menu planning.
- Minimise food waste through effective stock management and portion control.
- Receive and check deliveries from suppliers.
- Rotate stock using FIFO procedures.
- Maintain clean and organised kitchen, preparation and storage areas.
- Ensure all kitchen equipment is cleaned and maintained correctly.
- Work efficiently to meet daily production deadlines.
- Assist with loading and dispatch preparation for deliveries when required.
- Work closely with management to ensure smooth daily operations.
Requirements
- Previous experience as a Chef, Production Chef, Cook or Catering Chef.
- Strong understanding of food safety and HACCP procedures.
- Experience preparing food in a high-volume kitchen environment.
- Knowledge of allergen management and cross-contamination prevention.
- Ability to work independently and manage workload effectively.
- Strong organisational and time-management skills.
- High standards of cleanliness and attention to detail.
- Ability to work efficiently in a fast-paced environment.
- Professional and positive attitude.
- Reliable and punctual.
Desirable Qualifications
- Professional cookery qualification.
- HACCP certification.
- Food Safety qualification.
- Experience in contract catering, school catering or large-scale food production.
- Experience with batch cooking and meal packaging operations.
