We are now seeking an experienced, passionate Breakfast Chef to join the team in Jean-Georges at The Leinster Hotel. Job Purpose
The Breakfast Chef is responsible for preparing and delivering high-quality breakfast dishes to guests, ensuring consistency, taste, and presentation at all times. This role plays a key part in creating a positive start to the guest experience and requires excellent organisation, attention to detail, and the ability to work efficiently in a busy kitchen environment. The Breakfast Chef will also support the wider kitchen team with prep work and ensure compliance with food safety and hygiene standards.
Role Responsibilities
Breakfast Preparation & Service

Prepare, cook, and present all breakfast menu items to a consistently high standard.

Ensure all dietary requirements and special requests are handled accurately and efficiently.

Maintain smooth service during busy breakfast periods.
Food Quality & Presentation

Ensure dishes are prepared and presented in line with hotel and brand standards.

Monitor portion control, taste, and presentation for every plate leaving the kitchen.

Work with the Head Chef or Sous Chef to review and update breakfast offerings.
Kitchen Organisation & Hygiene

Keep the breakfast station organised, clean, and fully stocked during service.

Adhere to all food safety, HACCP, and health & safety regulations.

Assist in the cleaning and maintenance of kitchen equipment and storage areas.
Stock Control & Ordering Support

Monitor breakfast stock levels and report shortages to the Head Chef or Sous Chef.

Support with ordering and stock rotation (FIFO) to minimise waste.

Conduct basic prep for the next day's service where required.
Team Collaboration

Work closely with the kitchen and front-of-house teams to ensure smooth breakfast service.

Support colleagues with general prep tasks as needed.

Contribute to a positive and professional team environment.
Preferred Experience

Previous experience as a Breakfast Chef or Chef de Partie in a busy hotel or restaurant kitchen.

Strong knowledge of breakfast and brunch cooking techniques.

Ability to work efficiently under pressure and to tight deadlines.

Good organisational skills and attention to detail.

Strong understanding of food safety, HACCP, and kitchen hygiene standards.

A team player with a proactive and flexible approach.

Excellent time management skills, with the ability to start early shifts reliably.
