We are the Distillery based in Boyle Co. Roscommon. Which specialised in production of vodka and whiskey.
Manage the entire end-to-end production process to create a clean, neutral spirit. Key duties include selecting base ingredients, overseeing fermentation, performing multiple, high-proof distillations, filtering to remove congeners, blending with pure water to target strength, and maintaining rigorous quality control and safety standards.
Ingredient Preparation & Fermentation: Sourcing and milling raw ingredients (such as wheat, rye, corn, or potatoes), liquefying starches, and managing yeast fermentation to produce a low-alcohol wash.
Fractional Distillation: Operating column or continuous stills to repeatedly vaporize and condense the alcohol. For vodka, the goal is to reach a high proof (often 95% ABV) to strip out impurities and distinct flavors.
- Making "Cuts": Carefully monitoring the process to separate and discard the undesirable "heads" and "tails" (which contain compounds like methanol and fusel oils) while keeping the clean "heart" of the distillate.
- Filtration: Passing the spirit through activated charcoal, carbon, or precious metals to remove any remaining aromatic substances and achieve a crystal-clear, neutral profile.
- Blending & Proofing: Diluting the highly concentrated, pure alcohol with high-quality water to reach standard bottling strengths, typically 37.5% to 40% ABV. [1, 2]
- Quality Control & Regulatory Compliance: Conducting sensory evaluations, maintaining strict hygiene and sanitation of all equipment, and logging batch records for excise tax and inventory tracking.
