The Royal Marine Hotel is currently recruiting Chefs of all grades to join our culinary team in our renowned 228-bedroom luxury hotel.
Under the direction of Executive Head Chef Karl Smith, our menus showcase sophisticated Irish cuisine with a European influence, created using the finest fresh Irish ingredients.
We are looking for talented, passionate, and motivated chefs who are committed to delivering exceptional food and outstanding guest experiences. The ideal candidate will have a strong culinary background, excellent attention to detail, and a genuine passion for hospitality.
Key Responsibilities

Assist in the preparation, production, and service of high-quality food across all food outlets.

Prepare, supervise and cook dishes on your designated section.

Support and oversee the work of Commis Chefs and Demi Chefs.

Assist the Head Chef and Senior Sous Chef with menu tastings and development.

Communicate and resolve food production issues effectively with senior kitchen management.

Support menu planning, stock control and food costing procedures.

Maintain a thorough knowledge of all menus, including breakfast, lunch, table d'hote and a la carte offerings.

Assist with departmental promotions and sales initiatives.

Monitor the quality of mise en place and report any concerns to the Sous Chef.

Provide on-the-job training and guidance to junior chefs.

Ensure production sheets are completed accurately and updated daily.

Ensure all dishes are prepared and delivered to the correct service areas on time.

Report any faults in kitchen equipment or facilities and ensure all equipment is used safely and correctly.

Work closely with the Head Chef and Senior Sous Chef to maintain the highest standards of food quality, hygiene, and presentation.

Requirements

Previous experience in a professional kitchen environment.

A passion for food and delivering excellent guest experiences.

Strong organisational skills and attention to detail.

Ability to work effectively in a fast-paced environment.

Knowledge of food safety and HACCP procedures.

A positive attitude and willingness to learn.

Flexibility to work evenings, weekends, and public holidays as required.

Must be living in Ireland and have the legal right to work in Ireland.
