The Lady Gregory Hotel is seeking an experienced and passionate Head Chef to lead our kitchen team and drive excellence across all food operations.
As Head Chef, you will be responsible for overseeing the day-to-day running of the kitchen, ensuring the highest standards of food quality, presentation, hygiene, and service. You will play a key role in menu development, cost control, team leadership, and delivering exceptional dining experiences for our guests across the restaurant, bar, weddings, conferences, and special events.
Key Responsibilities
- Lead and manage all kitchen operations.
- Develop and implement innovative, seasonal menus.
- Maintain consistently high standards of food quality and presentation.
- Ensure full compliance with HACCP, food safety, and health & safety regulations.
- Manage food purchasing, stock control, and supplier relationships.
- Monitor food costs, labour costs, and kitchen budgets.
- Recruit, train, mentor, and motivate kitchen staff.
- Work collaboratively with hotel management to enhance the overall guest experience.
- Ensure efficient service during busy periods, functions, weddings, and events.
- Maintain a clean, organised, and professional kitchen environment.
The Ideal Candidate
- Proven experience as a Head Chef or Senior Sous Chef in a hotel or high-volume hospitality environment.
- Strong leadership and people management skills.
- Excellent culinary skills with a passion for quality ingredients and modern food trends.
- Sound knowledge of HACCP and food safety legislation.
- Experience with menu planning, food costing, and budget management.
- Ability to work under pressure while maintaining high standards.
- Strong organisational, communication, and problem-solving abilities.
