Job Description / Role Details
At The Keadeen Hotel, we are seeking an experienced and motivated Banqueting Sous Chef to join our culinary team. This role is responsible for supporting the delivery of exceptional food experiences across a wide range of hotel events, including weddings, conferences, gala dinners, corporate functions, private celebrations, and outdoor catering events.
Working closely with the Executive Chef, you will help lead the banqueting kitchen operation, ensuring consistently high standards of food quality, presentation, hygiene, and service for events of all sizes.
Key Responsibilities
- Assist in the planning, preparation, and execution of menus for banquets, conferences, weddings, and special events.
- Supervise and support the banqueting kitchen team during food preparation and service.
- Ensure all dishes are prepared and presented to the highest standards and in line with hotel specifications.
- Coordinate food production to meet event schedules and service requirements.
- Monitor food quality, portion control, and waste management.
- Support ordering, stock control, and inventory management.
- Ensure compliance with all food safety, HACCP, and health & safety regulations.
- Assist with staff training, development, and performance management.
- Work collaboratively with the Events, Conference, and Food & Beverage teams to ensure seamless event delivery.
- Deputise for the Executive Chef in their absence when required.
Requirements
- Previous experience as a Sous Chef or Senior Chef de Partie in a hotel banqueting, events, or large-scale catering environment.
- Strong knowledge of banquet operations and high-volume food production.
- Ability to manage multiple events simultaneously while maintaining exceptional standards.
- Excellent leadership, communication, and organisational skills.
- Strong understanding of food safety and HACCP procedures.
- Flexible approach to working hours, including evenings, weekends, and public holidays.
- Culinary qualification or equivalent professional training preferred.

Pay: €40,000.00-€45,000.00 per year
