With 91 bedrooms, many offering stunning bay views, and a reputation as one of Wicklow’s premier wedding, conference, and events destinations, we are now seeking an experienced Assistant Banqueting Manager to support the smooth and successful operation of our Conference & Banqueting department.
The hotel features extensive Conference & Banqueting facilities for up to 450 guests, two popular dining outlets — The Pottery Restaurant and the Ferrybank Lounge — along with the Bay Health & Leisure Club, which includes an 18-metre pool, jacuzzi, steam room, sauna, gym, aerobics studio, and the Bay Beauty Rooms offering a wide range of treatments.
The Role
We are seeking a confident, guest-focused and highly organised Assistant Banqueting Manager to support the management and delivery of all weddings, conferences, and events at the hotel.
Working closely with the Banqueting Manager and wider Weddings & Events team, you will help coordinate events from set-up through to service and breakdown, while ensuring consistently high standards of food, beverage, service, presentation, and guest care.
This is a hands-on leadership role, ideal for someone with strong Food & Beverage experience who is looking to develop their management career within a busy hotel events environment.
What You’ll Need
- Previous wedding, events, or banqueting experience
- Previous hospitality or Food & Beverage supervisory experience
- Excellent customer service and communication skills
- Strong knowledge of F&B service, training, and service etiquette
- Ability to support administration, including reports, emails, checklists, and training plans
- Strong leadership skills with the ability to motivate and support a team
- Excellent attention to detail and a commitment to exceeding guest expectations

Key Responsibilities
- Support the Conference & Banqueting Manager in overseeing weddings, conferences, and banqueting operations
- Assist with the smooth running of events from set-up through to service and breakdown
- Ensure function rooms are correctly set up and maintained to the highest standard
- Assist with wedding and event show rounds when required
- Work closely with the Wedding & Events Manager and wider Sales & Events teams
- Ensure menus, event details, timings, and guest requirements are communicated clearly to the banqueting team
- Deliver consistently high standards of food and beverage service
- Supervise and support the banqueting team during events
- Lead by example and maintain excellent service standards
- Assist with staff training, onboarding, and ongoing development
- Help introduce and maintain service standards, procedures, and checklists
- Respond promptly and professionally to guest feedback and assist with resolving issues
- Monitor presentation, cleanliness, and organisation of function rooms and banqueting areas
- Ensure wedding and event storage areas are maintained in a tidy and organised manner
- Liaise with other hotel departments to ensure the smooth delivery of events
- Assist with staff promotional and guest events
- Support the introduction of new products, menus, wines, props, and service initiatives
- Report maintenance issues and ensure outstanding items are followed up
- Promote a positive, fair, and professional team environment
- Assist the Banqueting Manager with daily administration and operational duties
- Step into the Banqueting Manager's responsibilities when required
