Experience / qualifications desired.
- At least 4-5 years at Chef de Partie level or previous experience at sous chef level
- A culinary qualification is a distinct advantage but not a requirement for this role.
Purpose of Position
To oversee the running of the pastry sections of the kitchen. Here at the lake we have both a fine dining 2 AA Rosette restaurant and also the very busy casual dining Lake Side bistro so a range of styles will be required.
Main Tasks & Responsibilities:
· Responsible for keeping organized so that meals go out on time and the work area remains clean and orderly. (HACCP, Health and Safety, and Food Safety Management are maintained to the required standards to which training has been received.)
· The pastry sous chef is responsible for all culinary dishes that are prepared in their section. Because of this, they must be very knowledgeable about his or her specialty, as well as culinary functions in general.
· A person in this role must also be very organized and comfortable working in a high-pressure environment. They must also be able to delegate within their section, trouble shoot any problems during their shift as well as reliably carry out orders handed down to them by the head chef.
· To lead by example and ensure all procedures To deliver the production needs of the section to the required standards. They will also need to report all important issues back to the Head Chef (including guest and staff feedback while on duty.)
· To be creative and assist in dish and menu development and to be proactive in self development.
