Bar & Restaurant Manager, Doolin
Russell’s Seafood Bar is a well-established, high-volume restaurant in the heart of Doolin, operating at peak capacity from April through October and as a popular weekend destination during the off-season. We are known for our warm hospitality, excellent local seafood, and a strong cocktail offering.

The Role
The Bar & Restaurant Manager will be responsible for the overall day-to-day running of the business, ensuring smooth operations, strong team performance, and consistently high service standards.
This is a hands-on leadership role suited to someone who can bring structure, direction, and energy to an already busy and successful operation.
Key Responsibilities
Oversee all daily food & beverage operations within budgeted guidelines and to the highest standards
Lead, manage, and develop the team to deliver excellent service consistently
Plan and manage staffing, stock control, and ordering efficiently
Drive revenue through strong operational performance and customer satisfaction
Establish and monitor KPIs, targets, and procedures
Maintain clear and effective communication across the team
Handle guest feedback professionally and proactively
Organise and deliver staff training to maintain and improve standards
Requirements
Proven experience in food & beverage management, ideally in a high-volume setting
Strong leadership and team management skills
Excellent organisational and communication abilities
Financial awareness and the ability to manage costs effectively
A hands-on, solutions-focused approach
Passion for hospitality and delivering a high-quality guest experience

Pay: From €40,000.00 per year
