Lough Rynn Castle Estate & Gardens is seeking an experienced, creative, and passionate Head Pastry Chef to lead our pastry operation. This is an exciting opportunity for a talented professional to showcase their expertise within a luxury hospitality environment renowned for exceptional dining experiences, elegant weddings, and memorable guest events.
The successful candidate will be responsible for overseeing all aspects of pastry production, ensuring the highest standards of quality, presentation, and consistency across desserts, afternoon teas and special event offerings.
The successful candidate will be joining at a pivotal time for the Hotel as we will shortly be opening our new Restaurant.
Key Responsibilities
- Lead and manage the pastry section, ensuring smooth daily operations.
- Design and develop innovative seasonal dessert menus in line with the hotel's culinary vision.
- Create and oversee production of desserts, pastries, breads, petit fours, afternoon tea items, and specialty cakes.
- Maintain exceptional standards of food quality, presentation, and consistency.
- Manage stock control, ordering, and inventory within budgetary targets.
- Ensure compliance with all HACCP, food safety, and health & safety regulations.
- Train, mentor, and develop junior pastry team members.
- Collaborate closely with the Executive Head Chef and wider kitchen team on menu development and special events.
- Oversee pastry preparation for weddings, banquets, conferences, and functions.
- Monitor food costs, waste management, and operational efficiencies.
Requirements
- Proven experience as a Head Pastry Chef or Senior Pastry Chef within a high-quality hotel, restaurant, or luxury hospitality environment.
- Formal culinary or pastry qualifications preferred.
- Strong knowledge of modern and classical pastry techniques.
- Experience creating desserts for high-volume banqueting and events.
- Excellent organisational and leadership skills.
- Strong attention to detail and commitment to excellence.
- Ability to work effectively under pressure while maintaining high standards.
- Knowledge of HACCP and food safety requirements.
- A creative approach to menu development and presentation.
