Job Description: Food & Beverage Manager
The Food & Beverage Manager is responsible for the overall management, leadership, and successful operation of all Food & Beverage outlets within the Hotel
The role is accountable for delivering exceptional guest experiences, maintaining high operational standards, achieving financial targets, and developing a motivated and high-performing team. The Food & Beverage Manager will oversee all aspects of staffing, training, service delivery, stock control, compliance, and departmental performance while ensuring the Food & Beverage offering aligns with the hotel's standards and objectives.
Key Responsibilities
Leadership & Team Management
· Lead and manage all Food & Beverage teams across all 3 F&B outlets
· Foster a positive, professional, and guest-focused culture throughout the department.
· Recruit, onboard, train, and develop team members in line with hotel standards.
· Conduct regular performance reviews and provide ongoing coaching, support, and feedback.
· Manage employee relations matters in conjunction with the HR Department.
· Ensure effective communication and teamwork across all Food & Beverage outlets.
· Promote staff engagement, accountability, and continuous improvement.
Staffing & Rostering
· Prepare, manage, and approve weekly and monthly staff rosters using Alkimii.
· Ensure staffing levels are aligned with business requirements, seasonal demand, and labour budgets.
· Monitor labour costs and productivity across all Food & Beverage outlets.
· Manage annual leave requests and ensure appropriate departmental coverage at all times.
· Review labour reports and implement efficiencies where required.
· Support succession planning and identify future leaders within the department.
Training & Development
· Ensure all new employees complete a structured induction and onboarding programme.
· Deliver and coordinate ongoing training in customer service, product knowledge, upselling, food safety, and operational procedures.
· Identify training needs and implement development plans for supervisors and team members.
· Maintain training records and ensure compliance training is completed and up to date.
· Encourage employee growth, progression, and continuous professional development.
· Create a culture of learning and excellence throughout the department.
Operational Management
· Ensure all outlets operate efficiently and consistently to the highest standards.
· Maintain exceptional standards of service, cleanliness, presentation, and guest care.
· Monitor service delivery and implement improvements where necessary.
· Ensure all departmental Standard Operating Procedures (SOPs) are implemented and adhered to.
· Work closely with the Kitchen Team and other hotel departments to ensure seamless operations.
· Support and oversee events, group dining, and seasonal promotions where required.
· Ensure all opening, closing, and operational procedures are consistently followed.
Systems & Technology
· Manage staff scheduling, attendance, and labour forecasting through Alkimii.
· Ensure rosters are published in a timely manner and accurately reflect business needs.
· Monitor labour cost performance through Alkimii reporting and analytics.
· Utilise sales and operational reports to identify trends, improve efficiencies, and maximise revenue opportunities.
· Ensure all Food & Beverage team members are trained and competent in the use of departmental systems.
· Liaise with suppliers and service providers regarding system support, updates, and enhancements.
Guest Experience
· Lead by example in delivering exceptional hospitality and customer service.
· Build strong relationships with guests and actively engage with customer feedback.
· Resolve guest complaints professionally, efficiently, and in a timely manner.
· Monitor guest satisfaction scores, online reviews, and customer feedback.
· Implement improvements to continuously enhance the guest experience.
· Ensure a welcoming, professional, and memorable experience across all Food & Beverage outlets.
Financial & Commercial Management
· Manage departmental budgets and contribute to annual forecasting and business planning.
· Achieve agreed sales, profitability, and cost control targets.
· Monitor and control labour costs, food costs, beverage costs, and departmental expenses.
· Analyse sales reports and identify opportunities to increase revenue and profitability.
· Drive upselling initiatives and revenue-generating opportunities across all outlets.
· Monitor departmental Key Performance Indicators (KPIs) and implement corrective actions where necessary.
· Ensure all cash handling procedures and financial controls are followed.
· Assist in developing promotional activities and seasonal offerings to maximise sales.
Stock Control & Purchasing
· Oversee all ordering, receiving, storage, and stock management procedures.
· Conduct regular stock takes and investigate discrepancies.
· Monitor food and beverage margins and implement corrective measures where required.
· Ensure effective stock rotation and minimise waste.
· Develop and maintain strong supplier relationships.
· Seek opportunities to improve purchasing efficiencies and achieve best value while maintaining quality standards.
· Promote sustainability and waste reduction initiatives throughout the department.
Menu & Product Development
· Work closely with the Head Chef and senior management team on menu planning and development.
· Assist in developing seasonal menus, beverage offerings, and promotional activities.
· Monitor industry trends and guest preferences to ensure the Food & Beverage offering remains competitive.
· Ensure consistency and quality across all food and beverage products served.
· Support the development of wine, cocktail, and coffee offerings across all outlets.
Compliance, Health & Safety
· Ensure full compliance with HACCP regulations and food safety standards.
· Maintain compliance with all health and safety legislation.
· Ensure licensing laws and alcohol service regulations are adhered to at all times.
· Conduct regular departmental audits, inspections, and risk assessments.
· Maintain a safe environment for guests and employees.
· Ensure all Food & Beverage areas remain audit-ready and compliant.
· Maintain accurate records and documentation in accordance with company and legal requirements.
Candidates require 2/3 years Food and Beverage Management experience in a similar role in busy 4* Hotel. Applicants require current legal status to work in Ireland without restrictions, Work Permit is not available for this role
