Pastry Chef

About the role
We're a restaurant, bar and working microbrewery in the 200-year-old CHQ Building on Dublin's Docklands - with Stack A Restaurant in the vaults, our ground-floor bar and terrace, serving up to 250 covers and hosting events for up to 350 guests.
This is a role with real ownership: you'll run our pastry section yourself, from mise en place to plating desserts on service. You'll have a say in what goes on the menu, and the freedom to develop dishes properly rather than reheat someone else's. It suits a pastry chef who works well independently, keeps their section immaculate, and takes pride in a dessert that looks and tastes the same on a Tuesday as it does on a Saturday night.
About the hours: full-time hours average 39 per week across a quarter, flexing by around five hours either way with how busy we are. Some shifts are split. Your roster goes out every Saturday for the week ahead - and we close every year on Christmas Eve, Christmas Day, St Stephen's Day and New Year's Day (we're open New Year's Eve).
What you'll do
- Produce all desserts, plated and prepped, to a consistent standard across service
- Manage your own mise en place, prep lists and section organisation
- Develop and cost new dessert dishes alongside the Head Chef
- Order and manage pastry stock, minimising waste
- Maintain HACCP records, allergen information and food safety standards
- Work cleanly and calmly under pressure across busy services and events
About you
- Experienced - at least 2 years in a pastry role in a quality, high-volume kitchen
- Precise - you follow recipes and specs exactly; consistency matters more than flair here
- Self-sufficient - comfortable running a section on your own and managing your own time
- Organised and clean - your section reflects how you work
- Allergen-aware - you understand why it matters and take it seriously
- Flexible - available across the week, including some split shifts, evenings and weekends
- A clear communicator - fluent English

- €17.00-€19.00 per hour, plus a share of our tip pool - paid weekly through your payslip, fully transparent, explained before you start. Tips aren't contractual and levels move with trade
