·Welcoming customers: Greeting customers, managing the reservation book (OpenTable), and seating parties to balance server sections.
· Order Management: Using the POS (Point of Sale) system to input orders accurately and communicating special dietary requirements (allergies) to the kitchen.
· Menu Knowledge: Explaining daily specials, describing ingredients, and recommending beverage pairings.
· The "Check-Back": Returning to the table 2 minutes after food is served to ensure quality and satisfaction.
· Table Resetting: Clearing ("busing") plates, sanitizing tables, and resetting "mises" (cutlery and glassware) for the next guest.
· Polishing: Ensuring all wine glasses and cutlery are spot-free before they reach the table.
· Station Stocking: Replenishing napkins, straws, condiments, and menus throughout the shift.
· Billing: Presenting the bill, processing card or cash payments.
· Closing Duties: Reconciling the till (cashing up), cleaning the dining area, and setting up the floor for the next morning.
· Menu Knowledge Explaining the different dishes and drinks to customers.
· Drink Specialization: Preparing or serving specialized drinks like Micheladas, and Aguas Frescas.
· Ambiance Control: Managing the music volume and lighting to maintain a vibrant, festive atmosphere typical of a cantina or taquería.
