A fantastic opportunity has arisen for a passionate Executive Head Chef to join the team at Whites of Wexford
Purpose of this role is to ensure the efficient running and management of all kitchen areas within the resort. To direct the day-to-day running of all operations within the kitchen and ensure that the highest possible quality is achieved and maximise profitability.
Responsibilities:

Monitor and control all kitchen areas and staff canteen ensuring the smooth running of all.

Responsible for all food and stock ordering and kitchen stock control.

Ensure the highest standards of food and hygiene are maintained at all times.

Responsible for the training of all chefs and kitchen porters.

Create new menus and prepare costing's. Ensure training on all new menus is complete.

Ensure preparation and presentation of all food dishes is consistent and up to high standards in all kitchens.

Liaise with departmental managers, food and beverage supervisors and sales and marketing team regarding functions, promotions and menus.

Ensure that wages, costs and wastage are controlled and monitored daily

Performance management and motivation of the kitchen department to assist with retention and development.

Ensure all kitchen team members are trained on all dishes

Complete performance reviews and help team members with their development. Set goals in line with KPIS and aligned with hotels goals for the year.

Ensure the HACCP is implemented in all Kitchens throughout the resort and that standards and records are maintained. Ensuring fridge temperatures, cleaning schedules, waste disposal and temperature checks are completely daily and weekly.
The ideal candidate will have:

A minimum of 2 years previous experience in a similar role.

Proven ability to lead a kitchen department with a track record of delivering financial results, guest satisfaction, staff retention and employee engagement

Proven track record of stock management and the ability to deliver budgeted cost percentages

Proven track record of payroll management and the ability to achieve required payroll targets

Knowledge of organisational brand standards and track record of achieving relevant targets.
