The Role
We are looking for an experienced and passionate Chef de Partie to join the TOCA kitchen team.
This is an important role within our kitchen. The chef will be responsible for ensuring that food preparation and production are carried out to the highest standards, while helping the kitchen operate efficiently, consistently and professionally.
We are looking for someone who takes pride and ownership of their work, someone who cares about the details, understands the importance of consistency and wants to be part of the development of a growing food brand.
Key Responsibilities
* Take responsibility for your assigned kitchen area and ensure it is organised, clean and ready for service.
* Prepare and produce TOCA’s food to our recipes, specifications and quality standards.
* Prepare ingredients, fillings, sauces, proteins, vegetables, desserts and other components required for daily service.
* Prepare and cook tapiocas and many others Brazilian-inspired dishes to TOCA standards.
* Ensure every dish leaving the kitchen is consistent in taste, portion, presentation and quality.
* Complete daily mise en place and preparation efficiently and according to production requirements.
* Follow TOCA recipes and procedures accurately while maintaining consistency.
* Assist with the preparation of catering orders, hampers and special events when required.
* Maintain excellent food hygiene, HACCP and health & safety standards.
* Ensure correct storage, labelling, rotation and handling of all ingredients.
* Monitor stock levels and communicate requirements to the Head Chef/Kitchen Manager.
* Help minimise food waste and control food costs.
* Keep the kitchen and equipment clean, organised and maintained to a high standard.
* Work closely with the wider kitchen and front-of-house team to ensure smooth service.
* Support and guide junior members of the kitchen team when required.
* Help maintain a positive, respectful and professional kitchen environment.
* Be flexible and willing to support different areas of the business when necessary.
The Person We’re Looking For
We want someone who is:
* Passionate about food and genuinely enjoys working in a kitchen.
* Experienced in a professional kitchen, ideally at Chef de Partie level or similar.
* Highly organised and able to manage their time effectively.
* Comfortable working in a busy, fast-paced environment.
* Consistent and attentive to detail.
* Able to follow recipes and procedures while maintaining high standards.
* Proactive and capable of working independently.
* A strong team player with good communication skills.
* Positive, reliable and professional.
* Someone who takes pride in what they put on the plate.
* Curious and willing to learn about Brazilian ingredients, techniques and food culture.
Experience in Brazilian Cuisine
Experience with Brazilian cuisine is highly desirable but not essential.
What matters most is having the right attitude, strong kitchen fundamentals and a genuine interest in learning.
Training will be provided on TOCA’s recipes, products, techniques and standards.
