The Role
Reporting to the Head Chef and Senior Sous Chef, the Junior Sous Chef will play an important leadership role in the day-to-day operation of the kitchen, ensuring all food preparation and service is delivered efficiently and consistently in line with departmental and hotel standards.
The successful candidate will support and lead the kitchen team during service, providing direction and maintaining high standards of food quality, presentation, consistency and service at all times.
All duties and responsibilities must be carried out in accordance with statutory Health & Safety requirements, HACCP procedures and hotel policies.

Primary Duties and Responsibilities
- Support the Head Chef in the effective management and smooth running of the kitchen operation, ensuring consistently high standards of food quality and service.
- Take a proactive leadership role within the kitchen team, providing guidance, direction and support to chefs and kitchen assistants during service and preparation.
- Assist in organising daily kitchen operations, including food preparation, service, staff allocation and workflow, ensuring the kitchen operates efficiently at all times.
- Maintain and monitor consistently high standards of food presentation, quality, portion control and consistency in line with the hotel's standards.
- Assist with effective stock management, including stock rotation, ordering, receiving deliveries, monitoring food usage and minimising waste and unnecessary costs.
- Ensure all food preparation and kitchen procedures are carried out efficiently and in accordance with agreed recipes, menus and operational standards.
- Take responsibility for maintaining high standards of kitchen cleanliness, hygiene and food safety, ensuring full compliance with HACCP and all relevant legislation.
- Lead by example in maintaining professional standards, teamwork, communication and a positive working environment within the kitchen.
- Assist the Head Chef with staff training, development and performance, helping to ensure team members understand their responsibilities and maintain the required standards.
- Monitor kitchen equipment and facilities, reporting any faults, maintenance requirements or health and safety concerns promptly to the Head Chef or Management.
- Deputise for the Head Chef when required, taking responsibility for the kitchen team, food quality and service standards in their absence.
- Carry out any other reasonable duties as required to support the effective operation of the kitchen and the wider hotel team.
Requirements:
- Previous experience as a Chef de Partie is required
- Prefered Hotel work experiance but not essential
- Ability to lead from the front, supporting the kitchen team
- Maintaining high standards through example
- Passion for producing high-quality food and service
- HACCP or food safety management qualification
- Ability to work as part of a team in a fast-paced environment
- Able to work over a 7-day rota with a mix of Day & Evening Shifts

Experience:
- Hotel Chef experiance: 3 year (preferred)
- Strong English
- HACCP: Level 1 minimum
