The Role You'll take full ownership of the kitchen at one of Temple Bar's longest-standing pubs — delivering consistent, high-quality Irish pub food at volume, service after service. Expect full houses, tour groups, and a menu that has to go out fast without ever dropping standards, all within a building with real history and a loyal following.
This role runs on a 4-day working week, giving you genuinely useful time off in a demanding industry.
Responsibilities Lead and manage kitchen staff across all shifts.
Maintain and develop the menu — hearty Irish classics, pub favourites, and seasonal specials Manage food costs, ordering, and supplier relationships.
Ensure full compliance with HACCP and HSE food safety standards Handle rotas, training, and day-to-day kitchen operations.
Maintain consistency during high-volume tourist trade and Temple Bar's peak season.
What we're Looking for proven experience as a Head Chef Background in Irish or traditional pub food essential.
Comfortable running a busy, high-turnover kitchen in a landmark city-centre venue Strong leadership and organisational skills HACCP certification.
Right to work in Ireland.
