ELLES is an independent neighbourhood café that’s growing quickly, and we’re looking for an experienced Night Baker to become a key part of our team.
This is a unique opportunity for someone who wants more than just another bakery job. You’ll work directly with the owners, taking ownership of our overnight production while helping shape the future of our bakery.
Our biggest focus is our signature 3-day cinnamon rolls, but you’ll also be producing gluten-free sponge cakes, cookie's and other fresh bakery products for the café.
As you’ll be working overnight while the kitchen is empty, this role requires someone who is experienced, organised and confident working independently.
What you’ll be doing
- Producing our signature cinnamon rolls to the highest standard.
- Baking gluten-free sponge cakes and other fresh bakery products.
- Preparing production for the following day’s service.
- Maintaining a clean, organised and efficient bakery.
- Managing your own workload throughout the night.
- Working closely with the owners to improve production and bakery operations.
- Bringing fresh ideas, new flavours and innovative products that excite our customers.
What we’re looking for
- Previous professional bakery experience is essential.
- Confident working alone and making decisions independently.
- A genuine passion for baking and high-quality products.
- Excellent organisation and attention to detail.
- Someone who enjoys creating new products and isn’t afraid to think outside the box.
- Reliable, hardworking and self-motivated.
- Own transport is essential due to the overnight working hours.

Schedule: Full-time, 5 days over 7
Expected Hours: Approximately 11:00pm–6:00am (hours may vary slightly and will be agreed with the successful candidate)
Pay: €40,000.00-€45,000.00 per year
