The group is made up of Base Wood Fired Pizza with a flourishing portfolio of 10 venues across Ireland and Portugal. The Leopardstown Inn is a well-established and much-loved venue in Stillorgan, South Dublin, and a key part of the Loyola Group family. We are looking for an experienced, passionate Restaurant Manager to lead our front-of-house team and help drive the next chapter of our success.
THE ROLE
Reporting to senior management, you will take full ownership of the day-to-day operation of the restaurant, ensuring an exceptional guest experience at every cover. You will lead, motivate and develop your team while keeping a sharp eye on performance, people management, and profitability.
WHAT YOU’LL BE DOING
- Leading, managing and motivating the front-of-house team on a daily basis, fostering a positive and high-performing working environment
- Taking responsibility for all people management matters within the team, including performance management, absence management, and disciplinary matters, in line with Irish employment law and company policy
- Ensuring all team members are fully trained to the required standard, with training records maintained and refreshed on an ongoing basis
- Identifying training needs within the team and implementing development plans to ensure consistent service standards across all shifts
- Ensuring full compliance with all relevant Irish employment legislation, including the Organisation of Working Time Act, the Employment Equality Acts, and the National Minimum Wage Act
- Overseeing all cash handling procedures, including till reconciliation, end-of-day cash-ups, and ensuring the team adheres to company cash handling policies at all times
- Delivering consistently high standards of food and beverage service across all services
- Driving revenue and managing costs, with full ownership of financial KPIs including GP, labour, and covers
- Monitoring and reporting on key performance metrics, taking corrective action where required
- Handling guest feedback and resolving any issues with professionalism and care
- Working closely with the kitchen team to ensure seamless service delivery
- Ensuring full compliance with food safety, hygiene, and licensing legislation
- Assisting with rosters, scheduling, and labour management
WHAT WE’RE LOOKING FOR
- Minimum 3–5 years’ experience in a restaurant management or senior supervisory role
- Proven background in both casual/gastro pub and fine dining/à la carte environments
- Demonstrated ability to lead and manage a team, including handling performance, conduct, and HR matters in line with Irish employment law
- A track record of delivering structured team training and ensuring all staff are fully trained, compliant, and consistently performing to standard
- Strong cash handling experience, including till management, cash-ups, and reconciliation, with a high level of accuracy and accountability
- Working knowledge of key Irish employment legislation and the confidence to apply it in a busy hospitality environment
- Strong commercial awareness with a solid understanding of financials, KPIs, and cost control
- A natural leader with excellent communication and team development skills
- Ability to thrive in a fast-paced, high-volume setting while maintaining high standards
- Passion for hospitality and delivering outstanding guest experiences
- Knowledge of Irish food safety regulations and licensing requirements
- Knowledge of ResDiary booking system and Microsoft Teams preferred but not essential
