We are currently recruiting for a Chef de Partie to join our team for a Full- Time position, 39 hours per week.
Purpose of the role
The Chef de Partie is an integral part of the delivery of great food to all our guests across all our food outlets. You will be required to prepare, produce and serve food from all kitchens within the hotel. As a Chef de Partie you will oversee a section of the kitchen, be it pastry, butchery, fish, sauces, vegetables and so on. You will be responsible for all Chef de parties and Commis chefs & will need to guide and mentor them when necessary. You will also be responsible for all culinary dishes that are prepared in their section. You must be very knowledgeable about your speciality. A chef de partie must also be able to give orders within their section, as well as reliably carry out orders handed down to them by the sous chef or head chef. You should also be able to take responsibility of your section and support the kitchen in the absence of the Senior Chefs.

- To have a thorough knowledge and understanding of all standards of performance and delivery within your department.
- Ensure a detailed and full handover is communicated to you from the shift before.
- To be knowledgeable on what is involved in your shift, know what reservations are booked in to the outlets.
- Know what the menu of the day is and if there are any specials, what they are and know the ingredients.
- Work tidily and hygienically in your assigned area within the kitchen for your shift.
- Communicate any relevant information to particular departments.
- To participate in team briefings in preparation for service

To avoid unnecessary wastage, observe proper portion planning and control and to act in a cost effective, responsible manner.
- To ensure excellent food hygiene practices are observed in the entire food chain from storage through to preparation and service.
- To follow a clean as you go method.
- To be fully familiar with all menu's and dish content - breakfast, lunch, table d'hotel and a la carte.
- To prioritise guest orders and requests at all times.
- To be allergy aware and ensure special dietary requests are observed or advise if not possible.
- To ensure all dishes are prepared in a timely fashion and to the appropriate agreed standard.
- To ensure any dishes leaving the kitchen/buffet are to the approved standard of presentation.
- To ensure the kitchen equipment is in proper working order, reporting any maintenance issues to your team leader immediately.
- To be aware of hazards and to ensure relevant protective clothing is worn and safety operation directions are followed at all times.
- To be conscious of proper handling of crockery, glassware and cutlery, preventing unnecessary breakages and loss of items.
- To avoid unnecessary wastage and ensure good stock rotation.
- To carry out cleaning duties as outlined in cleaning schedule for the kitchen. You will be responsible for the cleaning of your own work area.
- To work with the hotels Health & Safety Officer and kitchen management and to comply with the implementations and maintenance of all hygiene and health & safety programmes.
- To adhere to Company security procedures.
- To perform general cleaning duties as requested by the manager/team leader.

To actively participate in all training and personnel exercises designed to improve standards and performance levels.
Annual Salary of €37,000.00 per annum. Fulltime position, 39 hours per week.
