We are building a disciplined, high-performing pizza operation across multiple sites in Dublin, supported by a central production kitchen. With four locations, and further expansion ahead, we are now hiring a Head of Kitchen Operations to lead our kitchen leadership team and ensure consistent standards, discipline, and performance across the group. This is a senior leadership role focused on people, structure, and execution rather than product development.
The Head of Kitchen Operations will have full leadership authority over all senior kitchen personnel across:
● Central Production Unit (CPU)
● Stephen Street (flagship site)
● Merrion (retail unit)
● New Dublin 2 location (opening Summer 2026)
You will manage and hold accountable:
● Production Kitchen Manager
● Head Chefs
● Sous Chefs
● Senior pizza leads
Key Responsibilities :
Senior Leadership & Accountability
● Set expectations for all Head Chefs and production leaders.
● Hold site leaders accountable for performance and discipline.
● Challenge under performance early and directly.
● Ensure leadership standards are consistent across sites.
Personnel Management
● Oversee disciplinary processes across all kitchen teams.
● Support and develop Head Chefs as leaders.
● Step in when managers fail to manage.
● Contain issues before they escalate.
Labor & Roster Oversight
● Audit rosters and labor performance.
● Identify inefficiencies or staffing gaps.
● Enforce corrective action where required
Training & Capability Development
● Standardize training protocols.
● Raise leadership capability within senior kitchen staff.
● Build internal bench strength for future expansion.
Standards Execution
● Ensure food standards (defined by our Product Lead) are executed consistently.
● Maintain high standards of hygiene, cleanliness, and discipline.
● Conduct regular audits across sites.

Experienced in:
● Multi-site kitchen leadership experience.
● Proven track record managing senior chefs.
● Experience overseeing production kitchens or high-volume sites.
● Strong understanding of labour control and operational discipline
Pizza experience is advantageous but not essential.
Reporting to: Product & Quality Lead (The Founder)
