Job Purpose
The Bar & Restaurant Manager is responsible for the day-to-day operation of the bar and restaurant, ensuring excellent customer service, strong team performance, efficient cost control, and full compliance with food safety, licensing, health and safety, and company procedures.
The role requires a hands-on manager who can lead from the floor, maintain high service standards, manage staff effectively, control stock and costs, and help grow sales and profitability.
Key Responsibilities
- Manage the daily operation of the bar and restaurant.
- Ensure customers receive a consistently high standard of service.
- Lead, motivate, supervise and support front-of-house and bar staff.
- Prepare staff rosters in line with business needs and wage budgets.
- Organise staff breaks, shift cover and holiday cover.
- Train new employees and provide ongoing coaching to the team.
- Deal professionally with customer complaints and resolve issues promptly.
- Maintain high standards of cleanliness, presentation and organisation throughout the premises.
- Ensure opening and closing procedures are completed correctly.
- Monitor service standards during busy periods and provide hands-on support when required.
- Ensure all cash-handling, till and end-of-day procedures are completed accurately.
- Oversee stock ordering, deliveries, storage and stock rotation.
- Carry out regular stocktakes and investigate stock variances.
- Control wastage, breakages and over-pouring.
- Monitor food, beverage and labour costs.
- Work with the kitchen team to ensure smooth communication between front and back of house.
- Maintain good relationships with suppliers and ensure deliveries are checked correctly.
- Ensure menus, pricing and promotional material are accurate and up to date.
- Support the development of promotions, events and initiatives to increase sales.
- Monitor customer feedback and identify opportunities to improve the customer experience.
- Ensure compliance with food hygiene and HACCP requirements.
- Ensure compliance with alcohol licensing requirements and responsible service of alcohol.
- Maintain health and safety standards and ensure accidents or incidents are recorded appropriately.
- Ensure staff follow company policies, procedures and uniform standards.
- Assist with recruitment, interviews, induction and performance management.
- Address attendance, punctuality, conduct and performance issues where necessary.
- Complete management reports and provide updates on sales, staffing, stock and operational issues.
- Assist with budgeting, forecasting and financial targets.
- Carry out any other reasonable duties required for the effective running of the business.

- Previous experience in a supervisory or management role within a bar, restaurant, hotel or hospitality environment.

- Experience with staff rostering and labour-cost management.
- Good understanding of stock control and inventory management.
- Strong organisational and time-management skills.
- Ability to work calmly and effectively in a busy environment.

- Confidence handling customer complaints and staff issues.
- Good numeracy and basic financial-management skills.
- Experience using EPOS/till systems.
- Knowledge of food safety, HACCP and health and safety requirements.

Reporting To
The Bar & Restaurant Manager will report to the Owner or senior management team.
Working Hours
This is a full-time management position and will require flexibility, including evening, weekend and public-holiday work, in accordance with the needs of the business.
Pay: €29,665.35-€51,135.39 per year
