Mani Pizza is one of Ireland's leading Roman pizza brands, with locations on Drury Street, Dublin and Kildare Village.
Morso is a premium sandwich shop on Drury Street, serving freshly baked schiacciata filled with carefully sourced ingredients. Our approach is inspired by the great sandwich shops of Florence, Melbourne and New York, while creating something that's uniquely our own.

As we continue to grow, we're looking for an outstanding Head of Operations to help lead the next stage of our journey.

The Role
This is a senior leadership position responsible for the operational performance of all three locations.
You'll lead our management teams, develop people, improve systems, drive profitability and ensure every customer receives the same exceptional experience across every business.
You'll work directly with the owner and play a key role in shaping the future of the company.
What You'll Be Responsible For
Leadership
- Recruit, mentor and develop General Managers and site managers.
- Build a culture of ownership, accountability and continuous improvement.
- Hold weekly one-to-one meetings with each manager.
- Conduct performance reviews and create development plans.
- Manage recruitment for management positions.
- Deal confidently with performance issues where required.
Operations
- Ensure exceptional food quality, service and cleanliness across every location.
- Carry out regular operational audits.
- Maintain consistency in standards, systems and customer experience.
- Ensure all HACCP, food safety and health & safety procedures are fully compliant.
- Work with suppliers and contractors to keep the businesses operating at the highest level.
- Lead new operational projects and improvements.
Commercial Performance
- Take ownership of labour costs across all locations.
- Drive food margin and profitability.
- Review daily sales performance and identify opportunities for growth.
- Reduce waste and improve operational efficiency.
- Ensure stock management and ordering systems are accurate and consistent.
- Work with management teams to deliver agreed financial targets.
Business Growth
- Develop operational systems that allow the business to scale.
- Support future site openings.
- Help implement new menus, products and initiatives.
- Continuously improve the way the business operates.

- Managers lead with confidence and require minimal day-to-day support.
- Labour, food cost and profitability targets are consistently achieved.
- Standards remain consistently high across all locations.
- The business continues to grow with strong operational foundations.
- The owner spends less time solving daily operational problems and more time growing the business.
Who You Are
- You have proven experience leading multiple hospitality venues.
- You're an exceptional people leader who enjoys coaching and developing others.
- You understand hospitality finance, labour management and profitability.
- You're highly organised and thrive in fast-paced environments.
- You naturally build systems rather than relying on firefighting.
- You're commercially minded and comfortable analysing business performance.
- You lead by example and aren't afraid to spend time on the floor when needed.
- You have excellent communication and leadership skills.
- You care deeply about hospitality and creating memorable customer experiences.
