The Food & Beverage Supervisor at Home2 Suites Dublin City Centre is responsible for leading and coordinating the day-to-day operation of the Food & Beverage department, with a particular focus on breakfast service, while providing exceptional guest service and maintaining brand and safety standards. The F&B Supervisor takes ownership of the breakfast operation from set-up through to close-down, supervising the team, managing rotas and briefings, and ensuring standards, cost control, and guest satisfaction are maintained at all times, thus ensuring revenue is optimised. The role also supports any other food and beverage outlets or services in operation, and contributes to the implementation of departmental strategies, the brand service strategy, and brand initiatives.
Key Responsibilities:
Breakfast Operation & Team Leadership
- Take full ownership of the breakfast service from set-up through to close-down, ensuring a consistently high standard throughout
- Lead, supervise, and motivate the breakfast team to deliver excellent service under time pressure
- Plan and manage breakfast team rotas to ensure adequate cover in line with forecasted occupancy and demand
- Conduct pre-service briefings, allocate duties, and set clear expectations for each shift
- Train, coach, and develop team members, including onboarding new starters
- Monitor team performance, provide feedback, and escalate any performance or conduct issues to the Deputy General Manager
- Act as the primary point of contact and decision-maker on the floor during breakfast service
- Support recruitment and induction of new F&B team members as required
Breakfast Service Delivery
- Oversee the preparation, cooking, presentation, and replenishment of breakfast dishes to a consistently high standard
- Manage buffet flow, ensuring hot and cold items are stocked, labelled, and presented in line with brand standards
- Ensure à la carte breakfast items are prepared fresh, on time, and to guideline
- Monitor guest demand throughout service and adjust production, staffing, and buffet replenishment accordingly
- Engage with guests during breakfast service, resolve complaints promptly and professionally, and ensure a positive start to their stay
- Manage table turnaround and seating flow during peak breakfast periods
Wider Food & Beverage Support
- Support the delivery of other F&B offerings and services outside of breakfast where required
- Assist with events, functions, or private dining as needed
- Support menu and beverage development and suggest improvements where appropriate
Stock, Cost & Supplier Management
- Ensure the breakfast area and buffet are fully stocked and ready ahead of service
- Maintain stock levels and ensure all ingredients and beverages are available, prepped, and ordered in a timely manner
- Manage supplier deliveries, stock control, and inventory, minimising waste and controlling costs
- Support stocktakes and monitor consumption against budget
- Ensure all equipment is set up, clean, and functioning correctly, and report any faults promptly
Food & Beverage Quality & Standards
- Maintain high standards of food and drink quality, taste, and presentation across the breakfast and wider F&B offering
- Ensure recipes, portion control, and pouring guidelines are followed to maintain consistency and cost control
- Ensure all food and drink meets company and brand expectations
Health, Safety & Compliance
- Ensure the team adheres to all food safety, hygiene, and HACCP regulations
- Ensure the breakfast area and kitchen are clean, organised, and audit-ready at all times
- Monitor food storage, labelling, and stock rotation (FIFO) procedures
- Ensure compliance with licensing regulations where alcohol service applies
- Report any maintenance or safety issues promptly and follow up to ensure resolution
- Be familiar with and ensure the team adheres to all rules and regulations of the hotel with specific regard to:

Teamwork & Communication
- Work closely with kitchen, front-of-house, and other departments to ensure smooth service and guest satisfaction
- Communicate effectively with colleagues and management during busy service periods

Cleaning & Hygiene
- Maintain the highest standards of cleanliness across breakfast, F&B, and back-of-house areas at all times
- Ensure all crockery, cutlery, glassware, and equipment are washed and sanitised efficiently during service and after close
- Ensure dishwashing and storage areas are kept clean, organised, and fully operational throughout shifts
- Oversee scheduled deep cleaning duties including floors, walls, extraction units, storage areas, and waste zones
