We're currently hiring for a Compliance Officer to join our Culinary team at Carton House, A Fairmont Managed Hotel.
Key Responsibilities:

Ensure compliance with all food safety, HACCP, health and safety, and company policies across all culinary operations.

Conduct regular kitchen inspections and internal compliance audits to maintain the highest operational standards.

Monitor food preparation, storage, labelling, allergen management, and temperature control procedures.

Maintain accurate compliance records, including temperature logs, cleaning schedules, audit reports, and corrective action plans.

Support the implementation and ongoing monitoring of HACCP systems and food safety procedures.

Work closely with the Executive Chef and culinary team to identify areas for improvement and ensure corrective actions are completed promptly.

Deliver food safety and compliance training to new and existing team members.

Ensure all kitchen areas meet hygiene, sanitation, and cleanliness standards at all times.

Liaise with external auditors, environmental health officers, and regulatory bodies during inspections and audits.

Keep up to date with changes in food safety legislation and communicate any updates to the culinary team.

Promote a culture of compliance, accountability, and continuous improvement throughout the culinary department.

Prepare compliance reports and provide recommendations to management to improve operational standards.
The successful candidate will:

Have previous experience in a food safety, compliance, quality assurance, or culinary role within hospitality or food service.

Hold a recognised HACCP qualification; additional Food Safety or Internal Auditor qualifications are desirable.

Have a thorough knowledge of food safety legislation, HACCP principles, and health and safety regulations.

Possess excellent organisational skills with strong attention to detail.

Be confident conducting audits, inspections, and maintaining accurate documentation.

Have excellent communication and interpersonal skills, with the ability to train and influence colleagues.

Be proactive, self-motivated, and able to work independently while supporting the wider culinary team.

Be proficient in Microsoft Office and comfortable managing compliance records.

Have a positive, professional attitude with a commitment to maintaining the highest standards of food safety and quality.

Be fluent in English, both written and spoken.
