Founded in 2014, Wicklow Wolf Brewing Company is at the absolute forefront of the Irish craft beer industry. Operating from our state-of-the-art facility commissioned in 2019, we utilize a fully automated 35HL 4-vessel Braukon Brewhouse, an integrated CIP system, and a GEA centrifuge. This advanced setup gives us elite control over every drop of wort we produce, allowing us to consistently launch innovative, high-quality brews.
Due to ongoing expansion, we are looking for an Experienced Brewer to join our dynamic, multi-skilled team. We share responsibilities across all aspects of production, from raw material handling to final packaged beer. The Role
You will be an integral part of a hands-on, forward-thinking production team, managing the daily lifecycle of our core range and limited-edition beers.
Key Responsibilities:
- Brewhouse Operations: Operate and maintain our fully automated 35HL 4-vessel Braukon brewhouse, ensuring absolute consistency in wort production.
- Cellar Management: Oversee critical cold-side operations, including tank CIP, precise yeast management, fermentation/tank progression monitoring, dry hopping, centrifuge runs, and product transfers.
- Quality Assurance: Conduct rigorous, proactive QC checks across every stage of the brewing process and maintain an immaculate standard of data logging and record-keeping.
- Packaging & Engineering: Assist with the operation and monitoring of our 16-fill-head canning line, Framax bottling plant, and kegging equipment.
- Continuous Improvement: Troubleshoot process issues, pitch recipe development ideas, and maintain a spotless, organized brewing environment.
- Brand Ambassador: Work collaboratively across departments and occasionally represent Wicklow Wolf at industry events, taproom showcases, and trade visits.
Requirements
Essential Criteria:
- Experience: Minimum of 1+ years’ professional experience as a Brewer in a fast-moving, commercial production environment.
- Mindset: Highly motivated, self-starting, and deeply passionate about craft beer quality.
- Flexibility: A positive attitude toward a busy environment where scheduling shifts may require flexible hours to protect the beer.
- Safety: A natural commitment to safety protocols, ensuring you and your teammates work securely at all times.
Desirable Assets (A combination of these is an advantage, but not all are essential):
- A relevant technical brewing qualification (e.g., IBD General Certificate/Diploma).
- A formal third-level technical qualification in Science, Chemical Engineering, or a related field.
- Direct experience operating automated brewhouse systems or PLC software.
- Experience running automated canning, bottling, or kegging lines.
- Practical site tickets (Forklift Licence, Working at Heights, Manual Handling).
- Basic mechanical or electrical engineering/maintenance troubleshooting skills.
