Restaurant Manager – The Black Lion, Inchicore, Dublin 8

The Black Lion is one of Dublin's most historic and well-established hospitality venues, serving the Inchicore community for generations. Located in the heart of Dublin 8, the venue combines a busy food offering with a strong local pub trade and a reputation for quality service and hospitality.
We are currently seeking an experienced and ambitious Restaurant Manager to oversee and lead our food service operation. This is a hands-on management role for someone who is passionate about hospitality, guest experience, team development, and driving commercial performance.
Key ResponsibilitiesFood Service Operations
- Oversee all day-to-day restaurant operations.
- Ensure consistently high standards of food presentation, service, cleanliness, and guest satisfaction.
- Manage service periods effectively, maintaining excellent communication between front and back of house teams.
- Ensure all opening, service, and closing procedures are completed to company standards.
- Monitor customer feedback and implement improvements where required.
Team Leadership
- Recruit, train, develop, and motivate front of house staff.
- Lead by example on the floor during busy service periods.
- Conduct regular staff training and performance reviews.
- Manage employee performance and address issues in line with company procedures.
- Create a positive, professional, and customer-focused culture.
Financial & Commercial Management
- Manage labour costs in line with budgeted targets.
- Drive food sales and maximise revenue opportunities.
- Monitor daily and weekly trading performance.
- Assist with stock control procedures and cost management.
- Work closely with senior management on sales initiatives and business development opportunities.
Standards & Compliance
- Ensure full compliance with HACCP, food safety, health & safety, and company operating procedures.
- Maintain exceptional standards of cleanliness throughout all customer-facing areas.
- Manage customer complaints professionally and efficiently.
- Ensure all licensing and regulatory requirements are adhered to.
The Ideal Candidate
- Minimum 2 years' management experience in a busy restaurant, gastropub, hotel, or food-led hospitality environment.
- Strong understanding of restaurant operations and customer service standards.
- Proven ability to lead, motivate, and develop teams.
- Excellent communication and organisational skills.
- Strong commercial awareness and understanding of labour control, stock management, and profitability.
- Experience with rostering, cash handling, and reporting systems.
- HACCP and food safety knowledge essential.
- Ability to remain calm and effective in a fast-paced environment.
