The Oyster Tavern is one of Cork's most iconic licensed premises. Since 1792 we have been at the heart of Cork, serving up pints, drinks and of course, the craic. While The Oyster Tavern has been closed for the last few years, it has been, is, and always will be a cornerstone of Cork's vibrant pub scene. Nestled in the heart of the city on Market Lane adjacent to the English Market. The Oyster Tavern has always been a gathering spot for locals and visitors alike. We are incredibly fortunate to bring this historic venue back to life, starting October 2026.
The Role:
We are on the hunt for a dynamic and skilled Bar Manager who has at least 10 years experience in Cork's pub trade. This individual will be a standard setter, a leader, a great bartender in their own right and most importantly, a proven hospitality operator. The ideal candidate will know Cork's pub trade intimately, understand a P&L and budgets, and comfortable reporting directly to owners. If you love the pub trade, love a challenge and have experience building, leading and managing a high performance team in the pub trade. Then we want to hear from you!
Key Responsibilities:
- Full day to day operational management of The Oyster Tavern
- Full P&L and financial responsibilities for the venue
- Manage and build a high performance staff environment
- Develop and implement standard operating procedures for the venue
- Handle licensing compliance
- Development of a loyal customer base
What We Are Looking For:
- Minimum 10 years experience in a senior bar management or GM role in a high volume hospitality environment
- Proven track record managing large teams in a busy licensed premises
- Strong commercial acumen with ability to read and manage a P&L
- Experience with stock management and supplier relationships
- Full knowledge of Irish licensing law and responsible service of alcohol
- Ability to work late nights and weekends as required
- Passion for hospitality and delivering exceptional customer experiencesWhat We Offer
- €60,000 - €65,000 salary depending on experience
- Weekend and Late Night Availability
