Career Vision Recruiters have a unique opportunity available for an exceptionally talented Pastry Chef / Chocolatier to join the team of a luxury hotel in the Irish Midlands. About the Role
The successful candidate will be responsible for leading the pastry section across all dining outlets, including fine dining, afternoon tea, banqueting, and in-room amenities. A strong emphasis will be placed on chocolate work, artistic presentation, and modern pastry innovation, aligned with the hotel’s luxury positioning.
You will work closely with the Head Pastry Chef and senior culinary team to design and execute a pastry program that reflects seasonal Irish produce.

Key Responsibilities
- Lead and manage the pastry kitchen operation to a consistently exceptional standard
- Design and execute a refined dessert menu across multiple outlets (à la carte, tasting menus, afternoon tea, events)
- Create high-level chocolate work.
- Develop innovative, seasonal pastry concepts with a strong emphasis on creativity and precision
- Oversee all pastry production including breads, desserts, and banquet services
- Maintain exceptional standards of hygiene, HACCP compliance, and kitchen organisation
- Train, mentor, and develop junior pastry team members
- Collaborate closely with senior chefs to deliver a cohesive Michelin-level dining experience
Candidate Profile
- Proven experience as a Pastry Chef in a 5-star hotel, Michelin-starred restaurant, or equivalent fine dining environment
- Strong background as a chocolatier, with demonstrable expertise in tempering, moulding, sugar work, and artistic chocolate presentation
- Experience working within Michelin-level or award-winning kitchens is a strong advantage
- Creative, detail-focused, and passionate about modern pastry techniques and presentation
- Strong leadership skills with the ability to inspire and develop a high-performing team
- Excellent understanding of cost control, kitchen efficiency, and quality consistency
- Calm, organised, and able to perform under pressure in a high-volume luxury environment
