Role Overview
The Site Manager is responsible for the day-to-day management and overall performance of the store.
The role requires strong operational management, people management, cost control and compliance, with responsibility for ensuring the store operates efficiently, safely and to a consistently high standard.
The successful candidate must also have experience in food handling
The Site Manager will report directly to the Operations Manager and will also be accountable to the company owners for the overall performance of the site.
Key Responsibilities
Day-to-Day Store Management
- Take full responsibility for the day-to-day running of the store.
- Ensure the store is operated in accordance with company standards, procedures and policies.
- Maintain high standards of customer service, food quality and product presentation.
- Ensure the store is properly staffed and organised throughout each trading day.
- Identify and resolve operational issues quickly and effectively.
- Ensure all opening, closing and daily operational procedures are completed correctly.
Labour Cost Control
- Manage labour costs within agreed company targets.
- Prepare staff rosters based on forecast sales, operational needs and staffing requirements.
- Monitor labour performance throughout the week and make appropriate adjustments where necessary.
- Manage overtime, holidays, breaks and staff availability effectively.
- Ensure staffing levels are sufficient to maintain service standards without unnecessary labour cost.
Gross Profit, Product & Waste Control
- Monitor and manage gross profit and product margin performance.
- Ensure appropriate stock levels are maintained.
- Control waste, over-production, stock loss and unnecessary product usage.
- Investigate significant stock, waste or margin variances.
- Ensure stock rotation and FIFO procedures are followed consistently.
- Work with the Operations Manager to achieve agreed gross profit and product cost targets.
Food Safety & FSEI Audits
- Maintain excellent food safety and hygiene standards at all times.
- Achieve and maintain an FSEI audit score of at least 90%.
- Ensure HACCP procedures, temperature checks, cleaning schedules and food safety records are completed accurately and on time.
- Ensure any corrective actions identified through audits or inspections are completed promptly.
- Ensure the store is fully prepared for inspections by Environmental Health Officers or other relevant authorities.
- Escalate any serious food safety issue immediately.
Rostering & Staff Management
- Prepare and manage weekly staff rosters.
- Ensure appropriate staffing levels are maintained while controlling labour costs.
- Manage staff attendance, punctuality and performance.
- Support recruitment, onboarding and induction of new employees.
- Address performance, conduct and attendance issues in accordance with company procedures.
- Maintain a professional, productive and positive working environment.
Staff Training
- Ensure all employees receive appropriate training for their roles.
- Maintain accurate and up-to-date staff training records.
- Ensure employees are trained in food safety, customer service, cleaning procedures, product preparation and company operating standards.
- Identify additional training requirements and arrange appropriate coaching or retraining.
- Ensure new employees are properly inducted before working independently.
Store Cleanliness & Standards
- Maintain excellent cleanliness standards throughout all customer, production, storage and staff areas.
- Ensure daily, weekly and periodic cleaning schedules are completed.
- Regularly inspect the store to ensure required standards are being maintained.
- Ensure equipment, fixtures and fittings are kept in good condition.
- Report maintenance issues promptly and follow up until resolved.
- Ensure the overall presentation of the store reflects company standards at all times.
Visa, Immigration & Employment Compliance
- Ensure appropriate right-to-work documentation is obtained and maintained for all relevant employees.
- Monitor visa, immigration and employment permit documentation and expiry dates where applicable.
- Ensure employees are rostered and employed only in accordance with the conditions of their relevant immigration or employment permission.
- Maintain accurate records in accordance with company procedures.
- Escalate any uncertainty or potential compliance issue to the Operations Manager immediately.
Reporting & Communication
- Report directly to the Operations Manager on a weekly basis regarding overall store performance.
- Weekly reporting should include, where relevant:
- Sales and operational performance.
- Labour costs.
- Gross profit and product margin.
- Staffing and rostering.
- Food safety and audit performance.
- Training.
- Stock and waste.
- Maintenance and operational issues.
- Provide a monthly performance update to the company owners, or more frequently where required.
- Escalate significant operational, staffing, compliance, food safety or financial issues without delay.
- Attend management meetings as required.
- Provide accurate and timely information regarding store performance and agreed actions.
Quarterly Performance Bonus
The Site Manager will be eligible for a quarterly bonus of €350, subject to achievement of agreed performance criteria.
Performance criteria may include:
- Labour costs maintained within agreed target.
- Gross profit/product margin maintained within agreed target.
- FSEI audit score of 90% or above.
- Store cleanliness maintained to the required standard.
- Rosters completed accurately and on time.
- Staff training completed and records maintained.
- Satisfactory stock and waste control.
- Full visa, immigration and right-to-work compliance.
- Satisfactory staffing, attendance and operational management.
- Required weekly and monthly reporting completed accurately and on time.
- No significant unresolved food safety, employment, compliance or operational issues.
Payment of the quarterly bonus will be subject to management review and confirmation that the applicable performance criteria have been satisfactorily achieved.
Candidate Requirements
The successful candidate should have:
- Previous management or supervisory experience in food retail, hospitality, catering or a similar environment.
- Strong organisational and people-management skills.
- Experience preparing staff rosters and managing labour costs.
- A good understanding of food safety and HACCP requirements.
- Strong attention to cleanliness, compliance and operational standards.
- Good commercial awareness, including an understanding of gross profit, waste and cost control.
- Strong communication and leadership skills.
- The ability to manage a busy site and make appropriate decisions independently.
- A proactive and hands-on approach to store management.
Overall Responsibility
The Site Manager is expected to take ownership of the performance of the site and ensure consistently high standards across operations, people management, customer service, food safety, cleanliness, cost control and compliance.
