About the role
We run two busy kitchens in the CHQ Building on Dublin's Docklands - our ground-floor bar and Stack A Restaurant in the vaults - serving everything from walk-in service to private events for up to 350 guests, on menus built around seasonal Irish ingredients and modern international cooking.
This is a section role in a fast-paced kitchen. You'll take full ownership of your section, working to the standard set by the Head Chef and Sous Chef on duty. It suits a chef who takes pride in consistency - the same plate, to the same standard, on a quiet Tuesday and a 200-cover Saturday - and who wants to keep learning rather than just clock in.
About the hours: this is a kitchen role, so evenings, weekends and some split shifts are part of it. What we promise in return is your roster out every Saturday for the week ahead, a team that doesn't leave you uncovered - and Christmas at home: we close every year on Christmas Eve, Christmas Day, St Stephen's Day and New Year's Day (we're open New Year's Eve). Weekly hours can flex a little either side with trade
What you'll do
Your section
- Take full responsibility for your section - cleaned, organised and ready before every service
- Prepare fresh mise-en-place daily against the menus and any specials for each service
- Keep your section under control through service, working cleanly and methodically when the pass is busy
Food quality & consistency
- Cook every dish to the correct recipe and spec, using fresh ingredients from approved suppliers
- Send every plate to the pass at the correct temperature, portion size and garnish - to guest specification, every time
- Handle allergen requirements accurately and without exception
Stock, waste & compliance
- Store produce under optimum conditions and rotate correctly
- Monitor portion control and waste, anticipating shortages and flagging them to the Head Chef before they become a problem
- Take responsibility for food hygiene on your section - HACCP, food safety and health & safety procedures at all times, records kept up to date
Team & communication
- Train and guide commis chefs and kitchen porters on your section
- Keep a calm, respectful section - we don't do shouting, and we don't do egos, just good, honest food.
- Communicate clearly with the pass, front of house and other departments
- Know what's coming - bookings, events and promotions - and set your section up for it
- Attend staff trainings and meetings, and take on other ad-hoc tasks as the business needs; no two weeks are identical
About you
- Experienced - at least 2 years as a Chef de Partie or similar in a busy kitchen or catering operation
- Food-safety minded - HACCP certification is an advantage, but not a dealbreaker: we provide HACCP, fire safety and all other required trainings in-house
- Consistent - you deliver the same standard on your tenth service of the week as your first
- Calm - composed under pressure, able to hold your section together and multi-task when dockets stack up
- Team-minded - enthusiastic, approachable and honest; you back up the chef beside you
- A clear communicator - strong spoken English, confident with the pass and across departments
- Curious - genuinely interested in developing, and confident bringing realistic improvement ideas to the Head Chef. We promote and encourage creativity.
- Flexible - available for evening and weekend shifts, including some split shifts
What we offer
- €17.00–€19.00 per hour depending on experience - above the typical Dublin rate for the role
- A share of our tip pool on top, paid weekly through your payslip - currently adding around €1.50 per hour for kitchen roles. Tips aren't contractual, are on top of your agreed wages and levels move with trade, but the system is fully transparent and we'll explain exactly how it works before you start
- Closed Christmas Eve, Christmas Day, St Stephen's Day and New Year's Day - every year
- All required certifications provided and paid for - HACCP, fire safety and other relevant trainings, plus structured on-the-job training on your section
- Staff meals twice a day, depending on your shift, and a drink for closing staff

- Genuine progression - our sous chef started with us as a kitchen porter four years ago, our GM as a waitress; we'd rather promote you than advertise, we succeed with you.
