Old Fashioned Sam's is one of Dublin's standout luxury venues — everything at our bar is made in house, our standards are high, and our team is something we're genuinely proud of. We're looking for a cocktail bartender who wants to be part of that: someone who doesn't just meet a standard, but helps raise it.
The role
This is a bartender role for someone who takes real pride in their craft. You'll prep and build cocktails from scratch (we make everything in house — syrups, infusions, garnishes, the lot), set up and run a beautiful bar, and serve every guest to the highest standard. Just as importantly, you'll help protect and build the thing that makes Sam's special: a brilliant team environment and genuine hospitality.
We're not looking for someone to simply hold the line. We want someone who cares enough to improve it — who has ideas, sweats the details, and lifts the people around them.
What you'll do
- Prep cocktails and ingredients in house — syrups, infusions, batching, garnishes — to a consistent, high standard
- Set up and break down the bar — organised, clean, stocked, and service-ready every shift
- Build and serve cocktails and drinks to an exceptional standard — precise, consistent, beautifully presented
- Deliver genuine hospitality — read your guests, make their night, turn first-timers into regulars
- Uphold our standards — and help improve them — spot what could be better and take pride in raising the bar
- Protect the team environment — bring good energy, support your colleagues, and help keep Sam's a place people love to work
- Keep the bar clean, compliant, and running smoothly through a busy service
What you bring
- Real cocktail bartending experience — you know your way around a proper cocktail bar and in-house prep

Nice to have

- Experience in a premium, high-volume, or cocktail-led venue
- Barback-to-bartender progression or formal cocktail training
