Role Overview
As the Senior Sous Chef for our stylish gastro pub, you will be the Head Chef’s trusted second-in-command, playing a pivotal role in driving culinary excellence. You will lead a high-performing team with a focus on uncompromising standards, collaborative teamwork, and the delivery of exceptional, high-quality food. This is a hands-on leadership role for a chef who thrives in a fast-paced, creative environment and is passionate about using fresh, local Irish produce.
Key Responsibilities
- Upholding Excellence & Standards:
- Ensure every dish meets the highest standards of quality, flavor, and presentation before leaving the pass.
- Maintain impeccable standards of hygiene and champion strict adherence to HACCP and health & safety regulations.
- Implement and monitor Standard Operating Procedures (SOPs) to ensure consistency across all service periods.
- Team Leadership & Mentorship:
- Lead, train, and motivate the kitchen brigade, fostering a culture of mutual trust, respect, and professional growth.
- Identify training needs and mentor junior chefs (Commis and CDP levels) to improve their skills and culinary knowledge.
- Manage kitchen rotas and staffing matters, ensuring smooth coordination between the kitchen and front-of-house teams.
- Quality Food Delivery & Innovation:
- Oversee daily kitchen operations, ensuring seamless service even in the Head Chef’s absence.
- Collaborate with the Head Chef on seasonal menu development and daily specials, showcasing creative flair and modern Irish influences.
- Take responsibility for stock control, ordering, and waste reduction to achieve budgeted gross profit margins.
What We Are Looking For
- Experience: A minimum of 3–5 years’ experience as a Sous Chef in a high-volume, quality-focused gastro pub, hotel, or brasserie environment.
- Skills:
- Exceptional leadership and communication skills.
- Deep-rooted passion for high-quality European and Irish cuisine with an eye for detail.
- Strong organizational and multitasking abilities to handle high-pressure service periods.
- Qualifications: Relevant culinary qualifications and up-to-date HACCP/Food Safety certifications.
