Aperitivo Cicchetti, is an Italian small plate, wine & cocktail bar located on Nassau Street, Dublin 2. With a focus on great Italian food and wine alongside classic Italian cocktails with a selection of Aperitifs, Negronis & Spritzes.
Inspired by the Venetian "cicchetti", we have meticulously picked our Italian small plates from the best in Italian cuisine. Our dishes offer an opportunity to explore the many facets of Italian food from traditional Roman dishes such as carbonara & cacio e pepe, to panzanella from Tuscany & Arancini from Sicily.
The Role:
Due to continued growth we are looking to for an experienced Sous Chef with strong experience in Italian cuisine to join our team.
The chef will work closely with the head chef and restaurant manager in ensuring all kitchen operations are carried out efficiently.
Your main responsibilities will be:
· Managing all kitchen operations and communications. Ensuring the highest standards of hygiene are maintained and HACCP is strictly adhered to.
· Ensuring that all menu items are prepared in accordance with Aperitivo Cicchetti recipe standards.
· Ensuring all company systems and procedures are adhered to by kitchen staff.
· Delegating tasks to kitchen staff in line with their skills, job roles and kitchen requirements.
· Reporting to the Head Chef & General Manager any kitchen maintenance works as required and any shortfalls in the menu.
· Assisting in maximising food GP and minimising waste
· Collaboratively assist with stocktakes as required to minimise shrinkage.
· Maintain ordering schedule to ensure timely and accurate orders are put in place.
· Ensuring timely kitchen service and maintaining good communications with staff.
· Respond to customer complaints and special requests where feasible, ensuring corrective action is taken to achieve complete customer satisfaction.
· Ensuring all kitchen staff are wearing appropriate Personal Protective Equipment (hair nets, safety shoes, etc…) and correct uniform.
· Liaise with the site management team ensuring excellent communications between kitchen and all other departments.
· Full adherence to health and safety policy and procedures and lead by example.
· Assist in employee training, development and engagement.
The ideal candidate will demonstrate:
· Have a number of years Sous Chef experience preparing authentic Italian cuisine.
· Have a genuine passion for food and dedicated to the art of cooking.
· Ability to lead the kitchen team, good people management and communication skills, previous people management experience would be a distinct advantage.
· A team player with a positive attitude towards work and employee engagement.
· Good knowledge and experience of health and safety standards.
· Proactive with an eye for problem solving and continuous improvement.
· Organised and efficient, works on their own initiative with high level of attention to detail
Pay: €17.50 per hour
