We are currently recruiting for the following position:
Banqueting Sous Chef
The successful candidate will play a key role in the planning, preparation and delivery of conferences, weddings, banquets, corporate events and private functions. They will work closely with the Head Chef and Events team to ensure all functions are delivered efficiently, within budget and to the highest standard.

Responsibilities:
Assist with the day-to-day operation and management of the kitchen
Plan, prepare and execute conferences, weddings, banquets and other large-scale functions
Review event numbers, menus, dietary requirements and service timings in advance of each function
Assist with menu development, food costing and the execution of dishes to the required standard
Plan stock requirements and place orders for food, ingredients and kitchen supplies
Monitor deliveries, stock levels, food rotation and waste to maintain cost control and availability
Coordinate kitchen preparation and staffing requirements for multiple events
Liaise with the Events, Banqueting and Food and Beverage teams to ensure all event requirements are met
Supervise, motivate and support the kitchen team during preparation and service
Ensure food is prepared, presented and served consistently to Fota Island Resort standards
Support operational changes, policies and procedures, reporting directly to the Executive Chef
Maintain excellent standards of food hygiene, health and safety and kitchen cleanliness
HACCP knowledge and training
What we are looking for:
Certification from a recognised body is preferred
Previous experience in a similar role and environment
Basic computer skills and fluent English
Ability to work effectively as part of a team
Positive can-do attitude
Excellent Attention to detail
Flexibility to work across other areas of the Kitchen when required
Flexibility to work evenings, weekends and across a seven-day roster
