Active Kitchen Porter Duties
Job Purpose
The Head Kitchen Porter is responsible for leading and supervising the kitchen porter team, ensuring the highest standards of cleanliness, sanitation, and organisation in the kitchen. This role oversees daily cleaning operations, staff scheduling, HACCP compliance, and supports the wider kitchen team in maintaining a safe, hygienic, and efficient environment.
The Head Kitchen Porter also plays an active role in porter duties during shifts, leading by example and ensuring all cleaning, dishwashing, and waste disposal tasks are completed effectively to support smooth kitchen operations.
Role Responsibilities
Team Management & Leadership

Supervise and motivate a team of kitchen porters to maintain cleanliness and safety standards.

Provide training, guidance, and support to new and existing team members.

Conduct performance reviews and implement coaching or corrective actions where required.
Operational Efficiency & Sanitation

Oversee cleaning schedules and ensure all areas of the kitchen meet hygiene and sanitation standards.

Monitor workflows to optimise efficiency and support busy service periods.

Coordinate porter tasks with the wider kitchen team to ensure seamless operations.
Regulatory Compliance & HACCP

Ensure all sanitation and cleaning procedures adhere to HACCP guidelines and food safety regulations.

Maintain accurate records of cleaning schedules, sanitation logs, and compliance documentation.

Safely manage the use of cleaning products and equipment.
Resource & Stock Management

Oversee kitchen deliveries, ensuring timely receipt and correct storage of goods.

Inspect deliveries for accuracy and quality, resolving discrepancies as needed.

Manage cleaning supplies and equipment, ensuring availability, maintenance, and cost control.
Rostering & Scheduling

Develop and manage rotas for kitchen porters, ensuring adequate coverage across shifts and events.

Align staffing levels with kitchen requirements while managing labour costs.
EHO Visits & Inspections
-
Coordinate with the kitchen management team to prepare for Environmental Health Officer (EHO) inspections.

Act as the main point of contact during visits, providing necessary documentation.

Address and follow up on any recommendations from inspections.
Active Kitchen Porter Duties
-
Actively participate in porter duties including dishwashing, garbage disposal, and kitchen cleaning.

Lead by example with a hands-on approach, supporting smooth service operations.

Promote teamwork and a positive working environment within the porter team.
Preferred Experience
- Previous experience as a Kitchen Porter or in a supervisory porter role.

Strong understanding of HACCP, food hygiene, and safety practices.

Ability to lead and motivate a team effectively.

Strong organisational skills and attention to detail.

Good communication skills and the ability to work collaboratively with kitchen teams.
