Breakfast & Brunch Head Chef
Morning & Flame – Longford
We are looking for an experienced and passionate Breakfast & Brunch Head Chef to join our new restaurant in Longford.
This is a key leadership position. We are looking for someone who can take full responsibility for the day-to-day running of our breakfast and brunch kitchen, while also being a hands-on chef who cares about food quality, presentation and consistency.
The Role
You will take ownership of the breakfast and brunch kitchen, working closely with the kitchen team to ensure smooth service and consistently high-quality food.
Key Responsibilities
* Take full responsibility for the breakfast and brunch kitchen
* Lead and manage the kitchen team
* Organise daily preparation, mise en place and kitchen workflow
* Prepare and cook breakfast and brunch dishes to a high standard
* Maintain consistent food quality, taste, portion sizes and presentation
* Lead the kitchen during busy service periods
* Train and support Commis Chefs and kitchen assistants
* Manage stock levels and communicate ordering requirements
* Control food waste and maintain good portion control
* Maintain a clean, organised and efficient kitchen
* Ensure HACCP, food safety and hygiene standards are followed
* Ensure the kitchen is fully prepared before service
* Work closely with the owner/management to maintain and improve kitchen operations
What We Are Looking For
* Proven experience as a Head Chef with strong kitchen management experience
* Strong experience in breakfast and brunch
* Excellent knowledge of breakfast and brunch cooking
* Strong skills in modern brunch dishes
* Excellent plating and presentation skills
* Able to work efficiently and calmly during busy service
* Strong leadership and communication skills
* Good knowledge of HACCP and food safety
* Reliable, organised and professional
* Able to work independently and take full ownership of the kitchen
* A positive attitude and willingness to work as part of a small team
What We Offer
* €21–€24 per hour, depending on experience
* Full-time position
* 35–40 hours per week
