We are seeking an ambitious, energetic, and highly motivated Food & Beverage Operations Manager to lead our food and beverage operation and play a key role in shaping the next chapter of the venue's success.
This is a hands on operational leadership role suited to an experienced hospitality professional who thrives in a fast-paced environment, leads from the floor, and is passionate about delivering exceptional guest experiences while developing high-performing teams.
The Role
As Food & Beverage Operations Manager, you will have overall responsibility for the day-to-day management of all food and beverage operations within Opium. You will work closely with senior management, kitchen leadership, and front-of-house teams to ensure the highest standards of service, profitability, compliance, and guest satisfaction.
This is not a desk-based management position. We are looking for someone who enjoys being present on the floor, supporting their team, engaging with guests, and driving operational excellence every day.
Key Responsibilities
Operational Leadership
- Lead and oversee all daily food and beverage operations across the venue.
- Ensure exceptional service standards are consistently delivered.
- Maintain smooth and efficient operation of restaurant, bar, event, and function spaces.
- Actively support service periods and lead by example during busy trading times.
Team Leadership & Development
- Recruit, train, coach, and develop food and beverage teams.
- Create a positive, high-performance culture focused on teamwork and guest satisfaction.
- Conduct regular training and performance reviews.
- Support succession planning and staff development initiatives.
Financial & Commercial Management
- Manage departmental budgets and financial performance.
- Monitor labour costs, stock control, purchasing, and inventory management.
- Drive revenue opportunities while maintaining cost controls.
- Prepare forecasts and analyse operational performance to identify improvement opportunities.
Food & Beverage Offering
- Work closely with the Head Chef and kitchen team on menu development and innovation.
- Ensure menus remain commercially successful, relevant, and reflective of seasonal trends.
- Collaborate with suppliers to maintain quality and consistency.
Guest Experience
- Deliver a consistently exceptional guest experience.
- Resolve customer concerns professionally and effectively.
- Monitor guest feedback and implement improvements where required.
- Build a culture of hospitality excellence throughout the team.
Events & Venue Experience
- Support the planning and delivery of events, themed nights, private functions, and venue activations.
- Ensure operational readiness for all events and special occasions.
- Work with internal teams to create memorable guest experiences that drive repeat business.
Compliance & Safety
- Ensure compliance with all food safety, health & safety, licensing, and company standards.
- Maintain excellent hygiene and operational standards throughout the venue.
- Lead by example in promoting a safe working environment for both guests and employees.
About You
The successful candidate will be an experienced hospitality leader with strong commercial awareness, excellent people skills, and a genuine passion for food, beverage, and guest experience.
Essential Requirements
- Proven management experience within the Food & Beverage or hospitality industry.
- Strong operational knowledge of restaurant and bar environments.
- Excellent leadership, communication, and people-management skills.
- Experience managing budgets, forecasting, stock control, and labour costs.
- Strong customer service and complaint-resolution abilities.
- Highly organised with excellent attention to detail.
- Ability to prioritise effectively and make sound operational decisions in a fast-paced environment.
- Experience recruiting, training, and developing high-performing teams.
- Willingness to work across a seven-day operation, including evenings and weekends.
Desirable
- Hospitality, Tourism, or Business qualification.
- Experience managing events, themed parties, and large-scale functions.
- Experience leading operational change or business improvement projects.
- Knowledge of current hospitality trends and venue programming.
