Experienced Baker
The 061 Bakery is a growing artisan scratch bakery based in Kildimo, Co. Limerick. As our business continues to grow, we are looking for an enthusiastic and experienced baker to join our team.
We pride ourselves on producing all of our breads, viennoiserie, pastries, fillings, toppings and decorations entirely from scratch using high-quality ingredients and local where possible.
Previous experience in lamination, patisserie and yeasted dough production is desirable. Ideally, applicants will have at least two years' bakery experience, although full training will be provided across all areas of production.
Working Hours
The role includes:
- Three early shifts each week (3:00am–1:00pm)
- Two daytime shifts each week (10:00am–3:00pm)
A full driving licence and access to your own transport are essential, as the bakery is located in a rural area that is not serviced by public transport.

Key Responsibilities
- Laminating croissant and viennoiserie dough
- Weighing ingredients and mixing yeasted doughs
- Producing fillings for Danish pastries and other baked goods
- Baking bread, viennoiserie and pastries to a consistently high standard
- Oven management and bake scheduling
- Maintaining HACCP records and ensuring food safety compliance
- Maintaining excellent cleaning, hygiene and food safety standards
- Supporting all areas of daily bakery production
