About the Role
Claregalway Hotel is seeking an ambitious and energetic Duty Manager to lead our Food & Beverage operation while developing into a senior hotel operations role.
This position is ideal for an experienced Bar Supervisor, Food & Beverage Supervisor or Assistant Manager who is looking to take the next step into hotel management.
The successful candidate will be responsible for delivering exceptional guest experiences, leading the beverage operation, supporting food service, and acting as Duty Manager for the hotel during allocated shifts.
Key Duties and Responsibilities:
Beverage Operations
- Lead the day-to-day operation of the hotel bar.
- Deliver a high standard of cocktail preparation and premium beverage service.
- Drive beverage sales and maximise profitability.
- Manage stock control, ordering, wastage and monthly stocktakes.
- Develop seasonal cocktails, drinks promotions and upselling initiatives.
- Maintain high presentation and cleanliness standards throughout the bar.
Hotel Duty Management
- Act as Duty Manager for the hotel during assigned shifts.
- Lead the operation across all departments during evenings and weekends.
- Resolve guest queries and complaints professionally.
- Ensure exceptional customer service throughout the hotel.
- Support Front Office, Restaurant, Conference & Events and Accommodation teams as required.
- Make operational decisions to ensure smooth day-to-day running.
Team Leadership
- Lead, motivate and coach the Food & Beverage team.
- Assist with recruitment, onboarding and training.
- Conduct shift briefings and maintain service standards.
- Manage staffing levels to match business demands.
- Promote accountability, teamwork and attention to detail.
Commercial Performance
- Drive beverage revenue and average spend.
- Monitor labour costs and productivity.
- Support budget achievement and departmental KPIs.
- Identify opportunities to improve sales and guest satisfaction.
Standards & Compliance
- Ensure full compliance with HACCP, licensing legislation and hotel procedures.
- Maintain excellent hygiene, presentation and safety standards.
- Ensure accurate cash handling and till procedures.
- Support health & safety and security throughout the hotel.
What We're Looking For
Essential
- Previous experience in a busy hotel, gastro bar or high-volume licensed premises.
- Supervisory or management experience.
- Strong cocktail and premium beverage knowledge.
- Excellent customer service skills.
- Ability to lead a team by example.
- Strong organisational and communication skills.
- Flexible to work evenings and weekends.
- Calm under pressure with excellent problem-solving ability.
- Excellent level of English both oral and written
Desirable
- Previous hotel Duty Manager experience.
- Experience using hotel PMS and POS systems.
- Wine and spirits knowledge.
- Experience managing stock, GP and labour costs.
